Veggie Saute

This is by far one of my favorite veggie dishes of all time. <3 It was one of the side/main dishes for our 4th of July fooding! :]

Veggie Saute

(Also pictured = the cole slaw from here burying a kosher hot dog + sweet potato fries from Trader Joe’s.)

Ingredients*:
-zucchinis, julienned (or just chopped into bite-sized pieces)
-mushrooms, chopped into bite-sized pieces
-onions, finely chopped
-crushed garlic (or finely minced)
-grape tomatoes (for small bursts of flavor)
-freshly ground black pepper, to taste
-EVOO

Instructions:
1) Put a little EVOO into a skillet on medium-high heat. Add the garlic and onions, then the mushrooms.
2) Throw in the tomatoes and add the zucchinis last (they cook quickly!). Add pepper, to taste.
*Can also add sea salt, red pepper flakes, grated Parmesan to change up the taste!
