We were inspired after watching a documentary (I think it was called “The Food War”) on how all the money previously spent on food is now going towards health care bills because people eat so poorly. The fresh vegetables and produce in there looked amazing, so the next day, we went to the farmer’s market and bought some to make more food creations.
Veggie Omelet
Ingredients:
-eggs
-soy milk
-green bell pepper, chopped
-red bell pepper, chopped
-onion, chopped
-mushrooms, chopped
-pepper, to taste
-cilantro, to garnish
Instructions:
1) Beat eggs in a bowl. Add soy milk, and whisk it around some more. Season to taste with pepper and whisk it around some more. Pour the mixture eggs onto the oiled or buttered pan and let cook for a minute or so.
2) When the bottom of the egg has started to set and starts resembling a giant yellow pancake, gently flip it over and let cook for another couple until there’s no more uncooked egg.
3) Throw in the chopped veggies and fold the egg pancake across and over. Transfer to a plate and garnish with cilantro.
