If we were having coffee/tea today, I’d…tell you that I discovered the Aaron & Claire YouTube cooking channel somewhere last year and finally tried making one of the recipes from there! We made the Soft Tofu Stew (순두부찌개 / Sundubu-jjigae) and it was super tasty! (Fear not, it’s spicy but not as spicy as it looks!)
If we were having coffee/tea today, I’d…tell you that I just came upon the realization that I only have about 6 months to finish up all the stuff that I dumped into my 101 in 1001 that I so optimistically put together back in late 2019.
Although I’ve made some dents in it, I am a longggg way from making any serious headway on anything. To be fair though, I hadn’t counted on a pandemic happening and a lot of these had centered around travel, spending time with friends, and other such things…so I think I’ll just carry them over to the next one I come up with.
If we were having coffee/tea today, I’d…tell you that we went to the last Yelp Elite event of 2021 a couple weeks ago and it was a scavenger hunt of sorts! We got to sample things from a number of different establishments. My absolute favorite part of it was getting to hang out with the adorable dogs though. (I’m super hoping to get a house with a yard somewhere in the next couple years so I can adopt a rescue dog. <3)
If we were having coffee/tea today, I’d…tell you that I encountered the white screen of death on my blog last week and it was horrifying. :'( I thinkkkk I’ve managed to fix it (for the most part) but have still been coming across random pages that don’t work so it’s a little like playing whack-a-mole.
I’ve been on a productive streak lately and am trying to commit back to 1-2 posts/week! I have posts scheduled through mid-February so far, so here’s hoping this productivity lasts…

Yikes to the blog crash! I’ve had it happen as well, but I blog on a different platform than you so I’ve got no advice. Glad you were able to get it going again.
Just keep plugging away at your list. I’m sure this pandemic will end someday. Right?

It definitely was a horrifying sight, but I thinkkkk it’s back under control for now (hopefully for the foreseeable future)!

It’s funny, I’m much more likely to follow cooking blogs than YouTube channels, while my husband has gone way down the YouTube rabbit hole lately.
I say this a lot — goals are great, as long as we don’t cling to them too tightly. Life happens!
I know people who have dogs without a fenced in yard, and I can tell you that’s a royal PITA because I’ve done that. Wait for the yard & fence!

Very true! I won’t be devastated if I don’t manage to make em’ all (I rarely do — I like to be overly optimistically ambitious! :P ), but it’s nice to have stuff to work on!

That tofu stew looks delicious! I don’t follow any YouTube cooking channels but I have several vegan food blogs that I follow.
If my blog crashed I would have absolutely no idea what to do-other than hire someone to fix it. It’s one of the things I’d like to do this year- get better at the technical aspects of building a website. Good luck with yours! We’ll look forward to your posts.

You really keep busy! I say just keep plugging away at all your goals; none of us anticipated the pandemic to throw such a wrench into our lives or last this long.
For sure! One can only hope this year will be the end of it (…we’ll see…). I like having a billion goals/things to work on, so it definitely helps to keep me busy, haha.

Your list is impressive! Wendy has a good point so keep plugging away. :-) I have a Top 40 list (40 things to do before I turn 40). Well, that was almost 10 years ago. I am thinking of going over the list and changing it a bit.

I often modify my goals as life changes! :] I think it works better that way (hard to predict what life will bring/throw at you)!
I think that if my blog crashed at this point, I’d take it as a sign that it was time to move on LOL. Glad you were able to fix most things. I was looking back at my goals that I made in 2020 and, yeah, pretty much didn’t get a single one. I’m writing goals again this year (I didn’t even bother in 2021), but I’m being a bit less specific.

Are you sure that tofu stew isn’t spicy? I can’t handle spicy! But I do like tasty. I guess if I actually make something myself I could put less of the spicy seasoning. It is so cold here that I could go for that stew!
Nice tree on that mountain! I wonder who hiked that tree up there? I can’t even walk one a few blocks to my apartment.😉
Next time someone complains about having to lug a tree a long distance, I’ll say well at least you didn’t have to hike it up Mission Peak! I’ll have to wait a whole year to use this line and even then I may have to instigate it a bit. “So how was getting the tree this year?” Hopefully they complain so I can finally use that brilliant line.

I have no idea, but it magically seems to appear every holiday season! (Very nice of whoever’s doing it — it’s fun to see + take pictures up there with it! :P) We didn’t get a tree this past Christmas but maybe this upcoming one, we shall! :P

I have no idea! :( It seems to mostly be okay now — I do still have a lot of updates/fixes to do in general since it looks like the photos for most of my recipe index-type things aren’t loading anymore, but…one step at a time, hehehe.
