Welcome to the second Ultimate Coffee Date of 2025! Just popping in today for a quick life update of sorts. Things have been feeling kinda bleak/sad lately so I’ve been trying to surround myself more with people I love/getting back into things that bring me joy.

If we were having coffee/tea today, I’d tell you that…I had my introductory horseback riding lesson last weekend! As it’s been quite some time (16.5 years to be exact…), I was worried I’d forgotten everything.
Apparently it does come back though + I am free to go in early to groom/tack up that so I can spend the whole hour of my lesson riding! :D She was great about giving me helpful tips/feedback on how to improve on what I was doing + we were able to work on a posting trot for the last third/quarter of the lesson!
This is Phoenix! A very lazy boy, but also super sweet and agreeable. <3
If we were having coffee/tea today, I’d tell you that…last month was a really difficult month for Muffin. :[ I found out she had a UTI and started her on antibiotics, but then she stopped eating, and her kidney function plummeted drastically to the point where Google (I should not have looked) said she was in kidney failure and would only have a couple months left to live at best.
I’ve been doing subcutaneous fluids every few days and she’s on a phosphate binder + vitamins. With many thanks to Muff’s regular vet + one of my childhood friends who is now my 10-minute-away neighbor and also a vet, Muff has been doing better + is also on an injectable antibiotic to treat pyelonephritis. She’s been back to her feisty self again for the past week and I’m really hoping she’ll completely perk up soon!
The fluid sometimes settles onto one side inside of the other, so she ends up looking like she worked out a bunch only on one side. :'(
If we were having coffee/tea today, I’d tell you that…delicious foods this month include homemade hwedupbap (kinda like a Korean poke bowl!) + jarjeer salad (arugula, red onions, fresh mango, walnuts + pomegranate vinaigrette) with chicken shawarma!

![One of my childhood dreams was to get to take horseback riding lessons, but as that was/is quiteeee expensive, I had to keep my dreams in check. While I was at UCD, I got to volunteer at the equestrian center each week (something I’d have happily done for free) in exchange for riding lessons. ❤️ That summer’s memories remain as some of the happiest ones in my life. 🥰
After I finished residency, @successlifegoals (my super cool brother!) helped me to refinance my monstrous student loans into something way more feasible and I’ve been super aggressively paying them off ever since. As of the end of this month, I will be doneeeeeee!!! So naturally, my treat to self = horseback riding lessons! 😊🤩✨
I had my introductory lesson over the weekend and I miraculously have not forgotten absolutely everything. :]

How fun to be horseback riding again! I rode a bit as a kid at summer camp and took lessons for a time when I was elementary school.

Horseback riding sounds like fun! I’ve never really gotten into it but I’m always amazed by people hwo have the talent and coordination to do it. That salad looks amazing!
