Welcome to our weekly Foodie Friday link up! I’m linking up with Annmarie from the Fit Foodie Mama, Emily from Whatever Floats Your Oats, Esther from Chocolate Runner Girl, and Cassandra from Powered By Bling, to create awesome healthy recipes each week!
Today’s theme = Chilled Drinks! Make sure you hop around to check out all the amazing recipes in this link up and feel free to add your recipe as well!
I don’t know about you, but I adore honey. <3 Some time ago, I won a giveaway prize pack from Nektar Naturals over at Patty’s blog–it included 3 cannisters of tea (Yunnan Gold, English Breakfast, Masala Chai), 2 super-spiffy green mugs, and 2 boxes of Nektar Honey Crystals.
If you’ve been following along with my monthly Ultimate Coffee Dates, you’ll probably have realized that despite being a medical student, I am not a coffee-drinker…but I do love tea! I absolutely adored this prize pack for a whole lotta different reasons!
- I’m not the biggest fan of super-super sweet things, but honey is my favorite sweetener. One packet is equivalent to 1 tsp of liquid honey (but without the mess and/or the crystallization during winter months)! They’re also gluten-free (since it’s just honey) and GMO-free! :]
- The mugs were super appreciated because the one I bought at the dollar store kinda tends to emit weird sounds (…?!) when I fill it with hot water. I’d like to not die anytime soon from weird chemical exposures, so I’ve definitely switched over to using the mugs from Nektar Naturals. (Thanks! <3)
That being said, the mugs don’t get to be featured here today because we’re doin’ chilled drinks! Instead, you get…what once was a…pasta sauce jar.
Yep.
I’m in the process of moving. Deal with it.
Like I said, I’ve always loved tea, and Thai iced tea is definitely no exception. Love and adore. <3
Traditionally, Thai iced tea is sweetened with sweetened condensed milk, half & half, or lots of sugar…
I wanted to try my hand at healthifying it! This definitely isn’t an exact replica of traditional Thai iced tea, and you don’t get that characteristic pre-mixed look like in the picture above, but I like the coconut addition and the fact that it’s not laden with a whole ton of sugar!
Thai Iced Tea with Coconut Cream
Ingredients:
- ~1-1 1/2 tbsp Thai tea leaves
- 1/2 cup warm water mixed with 2 tbsp coconut cream
- 1/2 cup coconut milk
- 1 packet Nektar Naturals honey crystals (or to taste)
- ice
Instructions:
- Stir together warm water + coconut cream until well combined.
- Bring the water to a boil and add the tea leaves. Add the honey crystals (or sugar if you so desire) and gently stir to dissolve. Boil for ~2-3 minutes and remove from heat.
- Strain the tea leaves and set aside to cool.
- Fill glass with ice, then fill until it’s ~75% full and top off with coconut milk + coconut cream mixture.
- Stir and enjoy!

First of all, I like that photo of you with the Thai iced tea! Cute! In a mason jar, no less. Only way to go with tea, just sayin’. I have seen those Nektar crystals before and been intrigued! I like that they are GMO free, too! I want to incorporate honey into my wedding in the future because Wade and I call each other “honey”, but that is the ONLY “pet” name we call each other. No sweetheart, baby, sweetie pie…etc. Just, honey. And we both love honey. And honey is sweet, love is sweet…see?! It works!

hehe, thanks! If my friend hadn’t suggested taking a picture, it wouldn’t be around! I’m bad about taking pictures of things other than food + cats. :O
I really like the honey crystals! I may bake something with em’ next, just to see how that turns out! :]
haha, it definitely works! I’ve never had pet names in the past, but I would totally come up with a nauseatingly terrible one to use, just to mess with passersby! ;P
can you get caffeine free thai leaves? This drink sounds amazing!! You are beautiful!!

I don’t know if there are caffeine Thai tea leaves, but I rooted around online, and apparently rooibos can be a good substitute!
Thank you! <3!
O wow, that sounds really refreshing!!

Thanks, Rebecca! It’s definitely awesome for cooling down on a hot day! :D
Thai tea and Sri Lankan tea sound a lot alike – condensed milk is the sweetener in ours too! But, Farrah, what a great idea to use coconut milk! Happy Friday!

hehehe, I think HK-style tea sometimes uses condensed milk as a sweetener too! It’s definitely a popular favorite! <3 I've never had Sri Lankan tea, but I bet I'd love that too!
Hope you have a great weekend!
First of all, THIS LOOKS DELICIOUS, but second, OMG MY ONLY GLASSES TO DRINK OUT OF ARE OLD SAUCE JARS – they are legit the best thing ever and I constantly get asked where I “bought” them. GREAT MINDS THINK ALIKE – good luck with moving <3

YAYYY! So glad we have that in common! ;P I love repurposing things for other uses, and since there’s no place around here to recycle glass, I figured this would be the perfect way to work around that! :]
This looks amazing!!! YUM! I am much more of a tea person too.
Have a great weekend.

Looks delicious! I love tea and a friend had bought me honey pearls a few months ago but I haven’t used them yet. Now I’m going to have to use them.

Awesome! :D! I hope you like it! <3
This looks yummy! While I do love coffee, I enjoy tea as well, so I may need to give this a try. I’ve never had a traditional Thai tea (although it sounds delish, so next time I see that somewhere, I’m giving it a taste!)…so, I won’t have anything to compare your yummy take on it :). I love that you used a pasta jar…how clever and resourceful! :)

There’s no recycling for glass around here, so I had to find a way to repurpose it! :P
Sound delicious! All these refreshing drinks are making me thirsty and I’ve used the word delicious waaay too many times today!

mmmmm
thai flavourings with coconut are my FAVOURITE! this is definitely a must try for me!
My new favourite coconut pairing is in a greek yogurt parfait (yogurt, then a layer of pan-cooked shredded coconut and sliced almonds, topped with chopped mango and pineapple, drizzle with honey, repeat second layer and consume!)
delicious! can’t wait to try this beverage :)

Thanks, Sonali! I’ve always been intrigued by their coffee, but tea always ends up winning, haha. I hope your husband likes it! :D Not sure how much he likes sweetness, but you may have to tweak that around a bit! :P
Now this sounds yummy! Very refreshing for the summer. I may have to try it. And my husband just recently got into masala chai.

Ooo fun! I definitely want to try this since I’m trying to get more creative with homemade iced teas and coffees. I’ve never had real Thai iced tea, so I won’t even know whether it’s close to the original or not! ;)

Hi Farrah! I actually just found your blog after going through the comments on my summer giveaway and I LOVE IT! It’s so uniquely designed. You are gorgeous, and this drink looks delicious/unique. Do you eat a lot of thai-style dishes?

Hi Emily! :] You are too sweet! Thanks so much for your kind words! I’m glad you found my blog, because it led me to yours! :D! Looking forward to following along!
I adore Thai food, but I don’t get to eat it all that often unless I make it on my own! The one and only Thai restaurant here closed before I ever got a chance to try it (nooo!), and the next-closest one is unfortunately at least 2 hours away!
I love Thai iced tea, but limit myself knowing that it has the condensed milk in it :) love your healthy twist on it!
