Tex-Mex Diabetes Cooking

By Kelley Cleary Coffeen

Genre: Food/Cooking
Pages: 216

There are so many conditions and diseases that can be prevented from diet/lifestyle alone, so whenever I can, I like to start there. As such, I do a lottt of counseling with my patients on lifestyle and dietary modifications.

The first two chapters (Lifestyle Trends for Diabetes + Tex-Mex Flavor Essentials) cover simple healthy changes you can make to your life! It also discusses different types of chiles, herbs, spices, and other ingredients + tips for cooking to make em’ more diabetes-friendly.

The recipes in are divided into the following chapters:

Cocktails and More

I can’t drink alcohol, but I would happily dive into non-alcoholic versions of these! They sound so good! I’ve tried making my own agua fresca and Mexican hot chocolate in the past, but this also includes recipes for Tequila Sunrises, Frozen Margaritas, Micheladas, Margarita Martinis…

Bites and Starters

Learn to make your own tortilla or pita chips, Savory Mini Tostadas, Chile Bruschetta, Black Bean Layered Spread, Quesadillas de Fresco, Charred Corn and Avocado Toss, Tres Quesos Street Nachos…

Salsas and More

Pico de Gallo, Mexican White Sauce, Classic Queso Sauce, Jicama Salsa, Red Enchilada Sauce, Chile Cream Sauce…

Tortillas and Breads

Fresh Whole-Grain Flour Tortillas, Corn Tortillas, Light Sopapillas…

Breakfast Favorites

I’ve made Huevos Rancheros and Breakfast Steak Tacos before, but there are lots of other options, like Chilaquiles with Eggs, Pan Huevos with Avocado, Tex-Mex Breakfast Tacos, Mexican Bread Pudding with Fresh Berries, Whole-Wheat Morning Toast with Cajeta and Coconut…

Soups and Stews

Green Chile Corn Chowder, Chicken Tortilla Soup, Albondigas, Tex-Mex Chile con Carne…

Tostadas, Tacos, Tamales, Burritos, Enchiladas, and More

Roasted Sweet Potato Tostadas, Seared Sirloin Tacos with Guacamole, Speedy Roasted Chicken Soft Tacos, Poblano and Potato Tacos with Chile Cream Sauce, South Texas Fish Tacos, Bean and Rice Flautas, Spinach Asparagus Tamales, Machaca Burritos, Stacked Saucy Enchiladas with Fresh Greens, Torta de Fresco…

Savory Sides

Green Chile Rice, Zucchini and Corn Medley (Calabacitas), Refried Beans, Fresh-Mex Greens with Chipotle Honey Sauce, Chopped Mexican Salad with Lime…

Little Sweets

Quick Churros with Coconut Sauce, Mini Flan Cheesecakes, Mini Apple Chimichangas, Crispy Ice Cream Scoops with Cajeta Sauce, Saucy Pralines…

There are over 140 recipes in this cookbook! Each recipe includes a short intro, the ingredient list, instructions, tips/substitutions, serving size, prep/cook time, and nutrition facts (e.g. calories, fat, cholesterol, sodium, potassium, carbohydrate, fiber, sugar, protein)! There are (thankfully) photos in this cookbook and while there isn’t one for every single recipe, all the ones that are included look amazing! <3
