I was trying to use up my ingredients (and needed something super fast)! :O I have cans of shredded chicken, so that’s why the baking time is so short/I’m still alive.
I made this a while ago over pasta, but figured it’d taste even better over rice, since it’d absorb the flavors more, so I made it again. Trial and error! :O It’s become my standard go-to “recipe” for whenever I’m feeling super lazy, mainly because it’s so easy (+ relatively quick and not devastatingly unhealthy).

This one was part of my first culinary endeavor with my running buddies. We had to find some way to use the lemons, so here’s one of them. We cut the chicken into small pieces so it’d cook faster (we were hungry), and “stirred” it by just moving the pan around.
