I haven’t made anything with kabocha since the Spiced Kabocha Shepherd’s Pie I made with my friend a couple years back. To commemorate my living in a place with food options, I figured I’d get one again and attempt to make something cool with it — in the form of these stuffed kabocha squash bowls (seems perfect for autumn!).
As it turns out, my never-ending quest to use up all edible substances is a long and arduous task (partly because I’ve been somewhat lacking in inspiration), but I decided to do a “kitchen dump” recipe of sorts, and use whatever I had in my apartment and these happened!
The recipe is super versatile–you can pretty much throw in whatever you want to eat your kabocha with in here, so hooray for the perfect fall meal? :D? I had some hemp oil that I got from last year’s Choctoberfest and have been curious as to what that tastes like, so I figured I’d try using it in here!
Stuffed Kabocha Squash Bowls
Stuffed Kabocha Squash Bowls
Ingredients
- 1 kabocha squash cut in half + seeds removed
- 1/4 yellow onion diced
- 1/4 cup mushrooms diced
- 1/4 cup baby carrots chopped
- 1/4 cup apples diced
- 1/4 cup multigrain stuffing with cranberries
- 4 oz. extra firm tofu cubed
- 1 tbsp hemp oil
- 1 tsp thyme
- sprinkle of sea salt
- sprinkle of freshly ground black pepper
Instructions
- Preheat oven to 350 F.
- Line baking sheet with aluminum foil.
- Cut kabocha squash in half. If they're wobbly, you can slice the rounded bottom off so it'll stand up straight. Arrange the halves cut-side-up onto the baking sheet.
- Add mixture of onions, mushrooms, carrots, apples, tofu, salt and pepper. Top each kabocha bowl with multigrain stuffing and drizzle with hemp oil.
- Bake for ~1 hour, or until tender.

Great idea using the kabocha as a bowl! I actually haven’t tried kabocha squash yet, I haven’t seen it for sale in my area so I’d love to try it one of these days!

I’ve never had kabocha squash before, but I’m a huge fan of squash so I don’t see why I wouldn’t like this one!

It’s delicious!!! :D It might be harder to find but I’ve had a lot of luck locating it in Asian/Mexican grocery stores!
My store doesn’t seem to have the kabocha squash… I need to search around for them! This looks amazing!

These squash bowl looks soo delicious. Love all the fall colors and flavors. I use peppers for stuffing a lot but never squash. Def. going to try this!

I may or may not have lugged home 7 pounds of butternut squash + kabocha yesterday afternoon along with my laptop and a bunch of other miscellaneous groceries. Twas a fun 1-mile walk home, ahahaha.
