While I was in North Carolina with my cousins, one of em’ took me to an Asian market and I happened upon some extra soft tofu. The closest Asian market I know of is 1.5-2 hours away (and is pretty tiny ;_; ), so I decided to stock up. I have until the end of August to finish it all, but I’m pretty sure that will not be a problem, since I love tofu and would basically eat it plain/with anything if ever the chance arose. The back of the wrapper had a recipe for a smoothie, and I’ve never tried using tofu in a smoothie before, so I figured why not? :D
For the record, there is no way I followed these proportions exactly, but it turned out fine. Super delicious, pretty healthy and very refreshing, especially on these hot and humid days that I still have yet to get used to. :O
Strawberry Pineapple Tofu Smoothie
Ingredients:
-1/3 cup extra soft tofu
-1 1/2 cup frozen strawberries
-1/2 cup vanilla soymilk
-1 banana
-2 tbsp pineapple juice
Instructions:
1) Combine ingredients in a blender and blend until smooth.
2) Consume!

I’ve bought that same soft tofu at a Korean market before and wish I had bought more. This smoothie sounds so refreshing!
