Strawberry Banana Chia Pudding

I’m sorry about getting behind on replying to comments and the like! It’s been a reallyyy busy week, and yesterday was my last day of my surgery rotation! :'( I may or may not be taking my shelf exam as you read this, so please send some good thoughts my way! <3

Since May is National Strawberry Month, we’re kicking off this week with the theme of Strawberries! Make sure you hop around to check out all the amazing recipes in this link up and feel free to add your own recipe as well!

These days, I’m always on a mission to use up edible substances in my apartment, so I’m continually dreaming up new recipes for future Foodie Friday themes that will enable me to use everything up. I’m happy to report that I’ve been doing pretty darn well in the not-buying-groceries + saving-money department! :]

The fact that my preceptor takes me to the physician’s lounge every [week]day has made it so I really only need to worry about breakfast/dinner, and my church also has a potluck every weekend where my friend’s mom sends me home with leftovers, so I’ve been fairly well-covered in the fooding department. :O

It’s a good thing my parents raised me to be super frugal–I’ve been a penny-pincher for most of my life, and even more so ever since I moved across the country to live on my own + start grad school + medical school. It pays off though! :D

I only went to get groceries once last month, and spent a grand total of $12.24, which got me all the following:

  • 1 Liberte greek yogurt (strawberry)
  • 1 dozen eggs
  • 1 Balance Bar (cookie dough)
  • 1 lb. of asparagus
  • 2.45 lb. bananas
  • 4 oz. tomato basil goat cheese
  • 16 oz. fresh strawberries
  • 1 8 fl. oz. bottle of Hawaiian Tropic lotion sunscreen (SPF 15)
  • 1 6 oz. bottle of Banana Boat “Protect & Hydrate” Sunscreen/Moisturizer (SPF 50)

(Hooray for couponing, sales + Manager’s Specials!)

So while I’m on the subject of Manager’s Specials from Kroger, I bought two bags of ground chia seeds that were on sale for $1.99/bag some time ago, so I decided to finally make something out of them!

This makes about 2 servings, and only takes 4-5 ingredients to make! :]

Strawberry Banana Chia Pudding

Ingredients:

  • 4 strawberries, + more for garnish
  • 1/2 banana
  • 1 1/4 cups vanilla soy milk
  • 1 heaping tbsp chia seeds (I used ground chia seeds)
  • sprinkle of hemp seeds (optional, for garnish)

Instructions:

  1. Combine strawberries, banana + soy milk (or milk of choice) into blender and blend until smooth.
  2. Pour into mason jar and stir in the chia seeds.
  3. Cover and refrigerate overnight, or until thickened.
  4. Top with diced strawberries and serve!

  6. This sounds so good and just what I need right now after the awful binge eating I did last weekend. Don’t feel bad about not replying to your comments right away. We all get really busy sometimes and blogging while your busy is really hard. I sometimes struggle with it too. :)

    I love chia pudding! I’ve been eating chia seeds for a long time but was never really a fan of them in pudding-form until recently. This looks awesome!

      I got chia seeds a while back and for the longest time, had no idea what the hecks to throw them in (other than smoothies) until I started rooting around on the internets! :P

  17. Confession: I don’t use my blender because I am lazy and don’t want to:
    1. get it down from above my cabinets
    2. wash it (I have no dishwasher)
    BUT this looks tasty! I had no idea it was strawberry month, confession I used to hate strawberries so much I would lie and say I was allergic….NOW I LOVE THEM and have real food issues? Karma? :P
