Check out this awesome Pasta Shape Dictionary I found! :P This recipe is part of the 5 that Hira and I chose to make for our first (of hopefully many more to come) cooking endeavor a couple weekends ago. I actually haven’t had/made pasta in ages, but this turned out really well! :] Recipe adapted from here!
Spinach Tomato Rotini
- 12 oz. tri-color rotini
- 1 cup Greek yogurt
- 2 tbsp all-purpose flour
- 1 tbsp EVOO-4 cloves garlic, minced
- 1 can (14.5 oz) petite diced tomatoes
- 3 cups spinach
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp crushed red pepper flakes (omit if you don’t like spicy!)
- sea salt, to taste
- freshly ground black pepper, to taste
- grated Parmesan cheese, to taste
Instructions:
- Cook pasta in a large pot of boiling salted water. Drain well.
- In a small bowl, whisk together Greek yogurt and flour.
- Heat EVOO in a large skillet over medium-high heat. Add garlic, stirring frequently, until fragrant (~1 minute).
- Stir in tomatoes, spinach, and all spices. Season with salt + pepper and cook, stirring occasionally until spinach starts wilting (~2 minutes).
- Gradually whisk in Greek yogurt/flour mixture with Parmesan. Cook, stirring constantly, until slightly thickened (~3-4 minutes). Stir in pasta and gently toss to combine.
- Top with Parmesan (to taste) and serve immediately!

Yum! I like a bit of spicy so I’d definitely add in those red pepper flakes! Looks delish :)
