Sourdough Pancakes with Raspberry Coulis

I had sourdough pancakes for the first time back in August of 2015 when I was hanging out with Trish! (I already kinda told you about Mossy 2, but just in case you missed it, go check out that coffee date! :P )

We’d picked apples + raspberries the day I acquired Mossy 2, so we made a raspberry coulis to top the various apple desserts we’d made (e.g. Apple Turnovers). I also added some hazelnut spread and hemp seeds.

You can fold the two pancakes in half if you make super big pancakes and are having trouble eating em’!

These are, in a word, delicious, and I love that I don’t have to waste the “discard!” (They should name it something other than discard–my vote is for “spawn of starter,” heh heh heh.)

This starter is responsible for my very first successful attempt at making actual pancakes on my own. (I suppose the fact that I now own a spatula helps too…) <3

Sourdough Pancakes with Raspberry Coulis

You'll Need...

  • 1/2 cup unfed sourdough starter (recently fed would also work!)
  • 1 heaping tbsp whole wheat flour
  • 1 large egg
  • 1 tbsp coconut oil
  • sprinkle of sea salt
  • 1/8 tsp baking soda
  • sprinkle of hemp hearts

Directions

  1. Combine flour with starter in a small bowl and whisk in the egg.
  2. Melt coconut oil in a skillet and swirl to coat the pan, then pour remaining oil (if any) into sourdough+egg mixture.
  3. Add salt + baking soda. Wait for a couple minutes to allow batter to puff up a bit.
  4. Pour half the batter into the pan. When bubbles have formed on the pancake, flip it over. Remove from the skillet when pancake is golden brown.
  5. Grease skillet and repeat with remainder of batter.
  6. Top pancakes with raspberry coulis and a sprinkle of hemp hearts.

Additional Notes

The raspberry coulis can be made by mixing together ~1/4 cup sugar, 1 1/2 tbsp water, and 1 1/2 cup fresh raspberries into a pan. Simmer for ~15-20 minutes, stirring occasionally. This will make a pretty sizable amount, so you can store the rest in a jar for future use!

  1. Sourdough is the best! I’m sad I let my starter die, but I know it’s still possible with all my “needs”!

    1. :O! I didn’t know it was still possible! That’s awesome! I’ve only tried using whole wheat flour + regular flour with it thus far!

  2. I had sourdough tacos while we were in San Fran, so I know that sourdough works pretty well in other applications. I like that you paired it with the berry coulis–it would need that sweetness!

  7. Yum!! My husband made a sourdough starter last spring and he made two boules with it that were wonderful…unfortunately we didn’t keep up with our starter and it molded!! Anyways…I wish we had some so we could make these pancakes :)
