Well, it’s been ages since I’ve written a cookbook review (not since Pure Delicious! :O )!, but I’m back at it again, and super excited because I love and adore Skinnytaste and she is out with her second cookbook!
The Cauliflower Tots, Avocado Mango Salsa, and Loaded Santa Fe Baked Sweet Potatoes on my blog are inspired/adapted from her recipes, and she was actually one of my Food Blogger Cookie Swap matches in 2014! (I fangirled over this just a tiny bit.)

If you are constantly pressed for time and you like recipes that are easy and quick, this cookbook will be your best friend. Aka this cookbook will be my best friend, because what is free time when you’re in residency? What? Huh? (It’s a good thing I got used to 5-6 hours of sleep per night since uh, at least a decade ago.)
Skinnytaste Fast and Slow is filled with 140 different recipes that are delicious, unprocessed + packed with nutrients! They’re either ready in 30 minutes or less, or can be made in a slow cooker, so hooray for saving time!
It also goes into a discussion of things you can do to speed up the cooking process, what to pack in your pantry, what you can load your fridge + freezer with to save on money/prep time, fast cooking basics, slow cooker secrets…and even a month’s worth of meals for those of you who enjoy meal plans!

Ahh! I missed getting her first one, so I might have to grab that so I can complete my collection! :P
I’ve never actually cooked anything in a slow cooker before but I really want to try next winter! Perhaps I’ll have to add this book to my slow cooker must haves list as these recipes sound amazing!
I need to check out the Skinnytaste blog!
