Hooray for patotas potatoes!! Potatoes tend to be one of my favorite types of appetizers (Oven-Baked Crispy Truffle Fries, Slow Cooker Baked Potatoes, Wasabi Mashed Potatoes, Oven-Baked Parmesan Fries…), and I’m currently attempting to get back into meal prepping once again. (I’ve been super slacking in the cooking department lately, so here’s to hoping that changes this year. I’m workin’ on it, slowly but surely!!)
Over the past weekend, I went to hang out with Trish for food adventures and all sorts of deliciousness. :D We spent New Year’s Eve Day cooking up a storm for our dinner–the recipes will be slowly rollin’ out over the next couple weeks! You’ll be hearing more about our adventures at tomorrow’s Ultimate Coffee Date–the first of the year!
She lives super close to a Trader Joe’s, so we went there to gather up our ingredients and draw up some inspiration for our NYE dinner menu!
Simple Roasted Potatoes
Simple Roasted Potatoes

A super simple and versatile appetizer idea that only requires 5 ingredients!
You'll Need...
- 2 lb potatoes, cut into bite-sized pieces
- 2 tbsp EVOO
- sprinkle of finely ground sea salt
- freshly ground black pepper, to taste
- dried rosemary (or your choice of herbs), to taste
Directions
- Preheat oven to 450 degrees.
- Spread potatoes in a single layer on a large roasting pan. Toss with olive oil, salt, pepper, rosemary, and toss until evenly coated.
- Bake for ~20 minutes, or until tender. Stir occasionally.

I LOVE potatoes! We ate a lot of them growing up (like for almost every meal, or at least almost every day). This recipe sounds especially easy, and looks divine ;-)

I love roasted potatoes! I make mine with onions soup mix and olive oil, so delicious!!!!!! And I make them in the air fryer, they come out super crisp!!
