Are you down for a super easy + simple bread pudding recipe for this week? (Whether or not you are, it’s all I’ve got so just bear with me. <3) I’ve made bread pudding a couple times in the past (Autumn Harvest version vs. Chocolate Banana Bread version) but I’ve never made a super plain + classic one, so what better time than now to start?
Trish and I actually made this the morning after we had our epic New Year’s Eve feast a couple months ago (the one where we made Instant Pot Short Ribs, Chili Honey Roasted Brussels Sprouts, and Pear and Fig Baked Brie Dip)! :O We had a rather stale half-loaf of French bread left so we figured we might as well do something with it!
We also found some dried walnuts + cranberries to throw in here, but you could use any kind of nut/dried fruit you wanted to change it up! (Yay for using up things in the kitchen and reducing food waste!)

You'll Need...
- 1/2 loaf stale French bread
- 3 eggs
- 1 cup milk
- 2 tbsp sugar
- 1 tbsp vanilla extract
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup walnuts, chopped
- 1/8 cup cranberries
Directions
- Spray a loaf pan with cooking spray and preheat your oven to 350 degrees.
- Add all the ingredients (except the bread) together into a bowl and whisk until frothy.
- Slice bread into 1/2" thick pieces and layer into the loaf pan.
- Pour in the egg-milk mixture in increments--make sure you give it some time to soak in before adding the next layer of bread.
- Add walnuts + raisins.
- Bake for ~30 minutes or until top is crispy and center is no longer wet.

I have NEVER made bread pudding but this looks simple enough to make GF/DF so I’m definitely gonna try it!

Ooh thanks for sharing. I’ve never had bread pudding I don’t believe, but this looks really good. As for other things to make – I’m always looking for healthy recipes that don’t take a lot of ingredients. So maybe some lighter stuff for the summer?

I love bread pudding, I love it so much I limit my intake lol. I haven’t made it myself since I was a teenager, another clue to how much I love it lol. I love how easy this breadpudding is Farrah. thanks for sharing.
