Small Plates For Sunny Days: Small bites are perfect for trying many different tastes. Take tapas style eating outside for al fresco dining or a simple picnic. Or maybe you’re serving small bites at a bridal or baby shower or a graduation party. Show us your healthy take on small plates and finger foods.
I’ve been doing some traveling lately, so cooking has been on the back burner…but thankfully, Trish and I decided to embark on some kitchen experiments yesterday afternoon, and they turned out really well! (Yay!) We decided to make some simple baked eggs for easy snacks!
I want a little buffer when residency starts (plus some money to spend when I’m in Hawai’i!), so I’m trying to save money at the moment. In light of the fact that I’m currently taking care of the farm and we have a bunch of chickens, ducks and guinea fowl, I figured making something with eggs would be a good idea!
I’ve included step-by-step photos as well as written instructions below! This makes a super tasty “small plate” appetizer or snack!
These Simple Baked Eggs are super versatile–sky’s the limit when it comes to what you want in the filling! We found a package of grilling vegetables on sale, so we snagged that!

Simple Baked Eggs
Ingredients
- 4 duck eggs or your choice of eggs
- 1/4 cup red bell peppers sliced
- 1/4 cup zucchini sliced
- 1/4 cup squash sliced
- 1/4 cup green bell peppers sliced
- 1/4 cup red onions chopped
- 4 pieces fresh mozzarella cheese
- grated Parmesan cheese to taste
- freshly ground black pepper to taste
- garlic powder to taste
Instructions
- Preheat oven to 400.
- Layer your desired fillings into ramekins (suggested order: red bell pepper, zucchini, squash, green bell pepper, red onion, mozzarella cheese).
- Crack an egg over the top, and season with desired spices (e.g. pepper, garlic powder).
- Sprinkle grated Parmesan over each ramekin, then place them in the oven.
- Bake for 10-14 minutes (or to your desired level of done-ness).
