Savory Poached Egg Cheddar Oatmeal

Rise and Shine with a Savory Breakfast: The trend of protein-packed breakfasts is catching on…and back-to-school time is looming. This month, show us new healthy takes on eating savory or dinner-inspired dishes for breakfast. Think egg burritos, beans and rice, or maybe even pasta?!

When it comes to breakfast, are you a fan of sweet or savory? I kinda love both so it’s a little hard to decide. With sweet, you could have Oatmeal Yogurt Pancakes…or Banana Berry Smoothie Bowls, or Berry Dessert Toast, Chocolate Peanut Butter Yogurt Swirl, Sunshine Kiwi Oats, Sweet Potato Waffles, or Tiramisu French Toast/Tiramisu Oatmeal!

With savory, you could be enjoying Breakfast Steak Tacos, Guacamole Toast (proof that I made this before avocado toast got cool!?!), Savory Mochi Rice Cakes, Smoked Salmon Ricotta Scramble, or even a 15-minute Frittata!

A couple months ago, I won Emily‘s giveaway for Grainful‘s delicious meal kits (this is not a sponsored post) and got one each of their Homestyle Cheddar, Tomato Risotto, Madras Curry and Jambalaya. I figured I’d start with a classic first–the simplest one out of the bunch–Homestyle Cheddar!

What are your thoughts on savory oatmeal? Have you ever had it? I’ve shared a recipe with it before (Savory Oatmeal with Fried Egg & Sriracha), but I’m back with another!

As you may recall, I’m normally not even a fan of cheddar–it’s usually actually my least favorite cheese outside of American cheese/blue cheese, but I liked this (and Cabot Creamery’s cheese, especially in the form of my hot dates [hahaha]) a lot!

Savory Poached Egg Cheddar Oatmeal

Ingredients

  • 1 package Grainful Homestyle Cheddar package
  • 3 1/2 cups water
  • 1 tbsp soy milk or your choice of milk
  • 1 tbsp Barleans butter-flavored coconut oil*
  • 1 1/2 cups frozen mixed vegetables e.g. broccoli, cauliflower, carrots
  • 4 eggs poached

Instructions

  • Pour oats into a medium-sized pot and add 3 1/4 cups of water (you can use the bag as a measuring cup).
  • Bring to a boil, stir, then reduce heat to a simmer.
  • Cover and cook for ~25 minutes until the oats are slightly crunchy. If you enjoy softer oatmeal, cook for an additional 5 minutes.
  • Add contents of cheese packet, 1 tbsp milk and 1 tbsp Barleans butter-flavored coconut oil. Then add the mixed vegetables.
  • Stir til combined and serve!

Notes

*You can use butter instead of coconut oil if you'd like. The milk + butter/coconut oil are technically optional--they do make for a richer flavor though!

 

Given how easy/convenient this was to make, I’m definitely looking forward to trying out the other packages/flavors I have left from Grainful!

The Grainful package also includes instructions for how to prepare this using a slow cooker or a rice cooker too! :] I’ve included em’ below!

Crockpot: Combine oats + 3 1/4 cups water. Stir. Cook on high for 1 hour + 30 minutes. Once cooked, add contents of the cheese packet. Stir and enjoy!

Rice Cooker: Continue oats + 3 1/4 cups water, then stir and start rice cooker. Once cooked, add contents of cheese packet. Stir and enjoy!

  4. Ok I love the idea of oatmeal in the crock pot, I’m trying to decide how I feel about savory oatmeal, but I really think your recipe is persuading me to give it a try.

  8. I keep meaning to try savory oatmeal, but I always end up sticking with the sweeter flavors. Definitely usually sweet over savory for breakfast!
