These days, my schedule is complete death because I’m working in the ICU, so I’m all for quick + healthy recipes that don’t require a whole ton of ingredients to make, and as per usual, I like to work with whatever the hecks I can find hanging out in my fridge to save money.
Eggs and oatmeal are things that I tend to try to always keep stocked in my apartment, and I was craving something savory, so I came up with this! I made savory oatmeal once long, long ago, but it’s definitely been a while! This would’ve been extra amazing with some avocado or greens on the side, but I unfortunately ran out the day before.
Thankfully, I did have some red onion left, so I diced some in there as well!
Savory Oatmeal with Fried Egg and Sriracha
Savory Oatmeal with Fried Egg and Sriracha
You'll Need...
- 1/4 cup rolled oats
- 1/2 cup water
- 1 tsp soy sauce
- 2 eggs
- drizzle of EVOO
- 1 clove garlic, minced
- 2 tbsp red onion, diced
- drizzle of sriracha (optional)
Directions
- Add oats, water + soy sauce to a small pot and let cook on medium-low heat.
- Once it comes to a simmer, reduce the heat and crack an egg into the pot. Let cook, stirring frequently, until it reaches your desired level of consistency. (Add more liquid if desired.)
- In a small skillet, add olive oil and heat on medium heat. Add garlic and red onions. Cook for ~3-5 minutes and mix into oatmeal mixture.
- Crack an egg into the skillet and let cook for 3-5 minutes. When the whites are set and the yolk has been cooked to your desired consistency, remove pan from heat and transfer the egg onto bowl of oatmeal.
- Top with garlic + onions, then drizzle with sriracha.

Ok Ok Ok I’ve seen a few recipes for savory oatmeal, I’ve even been brave enough to order it at a restaurant but too much of a chicken to try it, lol. I love anything that has a runny fried egg and sriracha is a food group in my life. I’m going to try this recipe this weekend. I have a feeling I’m going to love it.
hehehe, I hope you do! <3 I don't make savory oatmeal too often since I usually have more sweet things + fruit lying around to throw into it, but I may have to start making this more often! ;P
