Welcome to Foodie Friday! I’m back this week with a recipe from last year (it could be worse, okay?) that I think you’ll love as long as you’re down with salmon (aka my favorite splurge protein) – a Sauteed Salmon Farro Grain Bowl!
If you by chance remember this spread from September, it’s now…over half a year later and I’ve only posted one recipe from it on here (Maple Roasted Pears with Balsamic Vinegar). It’s about time I get my shiz together and write up the rest, right?
In my defense, it’s been a very busy half-year since September, but all the same, I’ve really missed posting/coming up with recipes. Here’s to hoping I’ll stay constant on this now that I’m done moving around for a while!
My best friend and I got together last September for cooking/feasting purposes and made a bunch of stuff, including the pears mentioned above, Roasted Tomato Soup (I didn’t take a photo of just the soup, but maybe that doesn’t entirely matter…recipe coming soon?), Caprese Salad, and these adorable turtle breads from Kim-Joy’s cookbook.
This Sesame Maple Sauteed Salmon Farro Grain Bowl was our main course though! :] If you’ve never had farro, it’s a chewy grain with a nutty flavor that’s a great source of protein, fiber, magnesium, zinc, + some B vitamins. You can use any type of grain you want, but we went with this and it was super tasty!
Sesame Maple Sauteed Salmon Farro Grain Bowl
Sauteed Salmon Farro Grain Bowl
Ingredients
- 1 cup farro
- extra virgin olive oil
- 4 oz salmon fillets (2 of them!)
- sea salt
- freshly ground black pepper
- 1 tbsp sesame oil
- 1-2 tsp soy sauce
- 1 tbsp maple syrup
- drizzle of rice vinegar
- 1-2 stalks green onions chopped
- 1 cup sweet peppers chopped
- 1/4 cup fresh blackberries
- 1 avocado sliced
- 1 tsp toasted sesame seeds
- drizzle of lime juice
Instructions
- In a medium saucepan, combine farro with ~1tsp salt, then add water until the farro is covered by about 2". Bring it to a boil and cook until tender (~25 minutes).
- While the farro is cooking, combine sesame oil, soy sauce and maple syrup in a small bowl.
- Brush both sides of salmon with extra virgin olive oil and season with salt + pepper.
- Place salmon skin-side down into the pan over medium-high heat. Flip when you see it change color up the side and let cook til ~90% cooked, then peel off the skin and pour the sauce mixture over the salmon. Add drizzle of rice vinegar if you want extra zing to it.
- Serve over bed of farro and top with blackberries, chopped peppers, sliced cucumbers, avocado, green onion, and toasted sesame seeds.
- Drizzle with lime juice and serve warm.

This looks amazing. If there is one thing that our diet is missing right now it’s good quality seafood and fish. Next time we resupply I’m going to make a point to get some and try this out.
