Sadly, the recipe I had planned for this theme is likely going to manifest itself in a different Foodie Friday down the road. I unfortunately caught the plague (it’s just a cold) this week and am still on my 12-hour shifts (week 5!).
Thankfully, the team I’m working with is awesome–my senior resident and I have rather similar personalities and as we both like to get stuff done efficiently, we work really well together! She said she’d heard lots of good things about me so she trusts me with a lot, which is both flattering and terrifying.
I led a “goals of care”/end of life discussion yesterday morning that actually went surprisingly well, and things actually went pretty smoothly while I was “on my own” in the afternoon (my attending was there peripherally in case I needed anything). All things considered, I’m feeling slightly more comfortable, but still very much prefer the outpatient setting. We’ve had a number of patients in house that are really awesome to talk to though, and if not for my cold and the long hours, I’d actually love to sit down with them after my shift and chat, but alas–there’s always more work to be done!
In other news, this recipe was created by none other than my best friend/facebook spouse of 10 years (going on 11 this year!!)! I very much miss the days where we used to live together. <3 Be sure to check out our past creations too!
Raspberry Pear Mascarpone Toast
Raspberry Pear Mascarpone Toast
Ingredients
- garlic olive oil*
- 8 oz. mascarpone cheese
- ~1-2 tbsp raspberry honey or flavor of choice, to taste
- freshly ground black pepper
- sea salt
- 1-2 pears** sliced
- balsamic vinegar
- fresh mint optional, for garnish
Instructions
- Drizzle garlic olive oil onto bread and toast (e.g. on grill pan or in oven).
- Mix together mascarpone cheese, honey, salt + pepper and spread onto toast.
- Top with sliced pears.
- Drizzle with balsamic vinegar.
- Top with chopped mint, if desired.
Notes
- *If you don't have any garlic olive oil, you can toast the bread and rub a cut raw garlic clove on the bread, then drizzle with extra virgin olive oil.
- **You can also use peaches or figs if you'd like!
You can get all fancy with the different types of balsamic vinegar you use if you’d like! :] We used a peach mango one and a honey balsamic one on the ones pictured here!

(…) But to be fair, the only cheese I ever ate willingly for about 2 decades was mozzarella, so mayyybe not entirely my fault?

Feel better, kiddo! I know that those shifts can be exhausting and stressful, but take care of yourself. That was something that really set Alex apart from the others–he got SLEEP. He brought his food so that he never had to scrounge (unless on nights, and then he had one meal that he bought). So he was much more focused and able to manage better :D

Thank you! Thankfully, I think it was one of those quick come-and-go viruses so I’m pretty much all better now! :]! I’m really bad about sleeping and probably have been for the past decade or so, but I definitely bring snacks + meals so I don’t have to delve into the graham cracker storage at the nurses’ station as much! ;P

Thank you! I drank a whole ton of fluids and slept as much as I could so I think I’m all good now. :] I appreciate it! <3 (I need to find out where the hecks my turmeric went! ;_; It's somewhere in my pantry!)
