This has a nutty, creamy almost-pudding-like consistency and is glorious in every way (+ way healthier than it could be). I feel like it’d also make a great pie filling. We might try baking it next time. :D
Pumpkin Tofu Mousse
Nutritional Info: (makes ~16 servings) 83 cal, 6g CHO’s, 5g fat, 6g protein, 1g fiber, 12mg sodium per serving!
- 1 block of tofu (silken or soft preferred, but firm would be fine)
- 1 15 oz. can pumpkin puree
- 4 tbsp white chocolate peanut butter
- cinnamon
- ground ginger
- ground cloves
- ground nutmeg
- raw honey or maple syrup (optional)
Instructions:
- Blend all ingredients and add spices (to taste).
- Transfer to a glass dish, sprinkle with cinnamon and chill.
- If you want a sweeter dessert, drizzle some raw honey or maple syrup in and mix it up some more! :]
