Pumpkin Butter Chicken

Wayyyy back in the days of undergrad, the bane of my existence was chemistry. Organic chemistry was the main source of my wanting to bike in front of a bus, but general chemistry was pretty darn terrible too. It probably didn’t help that my ex at the time had decided to follow me to my undergrad, and of 75-ish lab sessions he possibly could’ve been in, he ended up in the same one as me.

Thankfully, I was allowed by then to ignore his existence, so labs weren’t too terrible (other than the fact that it was chemistry). I quickly became friends with the guy sitting next to me, because lets face it, I tend to enjoy the company of people who love food. Ian became my cheap dinner buddy, and who doesn’t like fast, simple and frugal meals (and awesome company)?!

Here’s us at graduation! He’s super tall so he’s shrinking so he’ll fit into the picture with me. ._. I’m in a t-shirt because I didn’t feel like walking in both my graduation ceremonies, but wanted to congratulate m’friends. Hooray for leveling up in life!

Since we lived in neighboring apartment complexes, about once or twice a quarter (he was a chemical engineer, and I was committing academic suicide), we’d get together with a couple friends and make a bunch of food.

One of the dishes we made was a random concoction I dreamed up one day. I adore Trader Joe’s, and had come across a jar of pumpkin butter (which I’d never heard of), so I decided to make chicken with it, and it turned out fantastic! :O For the record, you really don’t have to use both ground and regular chicken; I just did because I’m trying to transmute all the food in my fridge into edible substances!

I didn’t have a crockpot at the time, but now I do, so here’s my remake of it, with a whole bunch of other ingredients because I was cleaning out my fridge/kitchen for extra nutrition! Another bonus is that you can use the empty jar of pumpkin butter to make overnight oats! :D Waste not!

Crockpot Pumpkin Butter Chicken

IMG_9430Ingredients:

  • 6 oz. boneless, skinless chicken breasts, cubed
  • 6 oz. ground chicken
  • 1 jar Trader Joe’s Pumpkin Butter
  • 1 cup chicken broth
  • 5 garlic cloves, minced
  • 1 1/2 sweet potatoes, cubed
  • 1/2 large onion, diced
  • 1/3 green cabbage, shredded
  • 1/4 cup baby kale

Instructions:

  1. Add chicken, garlic, and onions into crockpot.
  2. Add in pumpkin butter and pour in the chicken broth.
  3. Top with green cabbage.
  4. Set crockpot on high for 4 hours, or for 7-8 hours on low.
  5. Top with baby kale, and serve over rice, pasta, quinoa (whatever you want!)!

  1. okay, so YOU made pumpkin butter appealing! I bought it a year a go, and it’s STILL sitting in my fridge untouched, I opened it and was like “THIS is what everyone is raving about?” I simply didn’t like it BUT maybe cooked down it would be better!

  4. I don’t eat meat, nor do I own a crockpot, but I *do* love pumpkin butter! And would probably love a crockpot to make yummy things with, too. I love hearing about all the meals you make with your friends- such a great way to de-stress and have fun!

  18. That looks so good! I’d never even heard of pumpkin butter before this post – is it embarrassing to admit that? ha. I love pumpkin anything! I once had a sweet potato/pumpkin latte with toasted almonds in Seoul. Best. thing. ever.

    1. Not at all! :O I only found out about its existence because I was scouring Trader Joe’s one day for cool new things! :P

      A sweet potato/pumpkin latte sounds amazingggg. *-* I wonder if there’s a copycat recipe online! :P Time to start rooting around the internets!
