Pomegranate Blueberry Acai Bowl

I’m partially in denial about summer ending (nooooo), so this week’s theme is Smoothie Bowls!

Random life update–my 4th-year schedule has been somewhat of a catastrophe lately, mostly due to a very sudden and random “hey, let’s bar all osteopathic medical students from rotating in this state!” decision made by the state of North Carolina, but…if there’s one thing I’ve learned from medical school, it’s to learn to just roll with the punches, lest you give yourself a [mini-]meltdown.

I’d love to have my 4th year schedule set into stone, especially some of these have been pending since January, but life doesn’t always work out the way you’d like it to, so I’m doing the best I can. Fulfilling all the random requirements would be lovely, because I’d really love to get to graduate on time.

I’m counting my blessings though, because someone I met at North Carolina Family Medicine Day caught wind of this when I was forced to cancel my rotation at their hospital, and is helping me to figure out a way to still go there! <3! She even offered to treat me to dinner when I got there to compensate for all the troubles I’ve been facing, which is insanely kind of her and way, way beyond what she had to do, because it definitely was not their program’s fault. I am definitely super-grateful for the awesome people in my life! :]

Anyway!

I had my very first acai bowl back when I went to San Diego for an Emergency Medicine conference, and since then, I’ve been hooked! I searched high and low for the Sambazon unsweetened acai smoothie packs when I was back home in California, but the only place where I could locate them was at Sprouts, in a rather limited quantity.

During the snowpocalypse, Sprouts restocked, and my mom sent me several packs because she is awesome. Due to the bitter cold, they were actually still pretty much frozen by the time they got here. (She’s also a master at tetris-ing things, which helped a lot. :O )

Pomegranate Blueberry Acai Bowl

Ingredients:

  • 1/4 cup pomegranate juice concentrate
  • 1/4 cup frozen blueberries
  • 1 package unsweetened Sambazon acai smoothie pack
  • ~1/4 cup granola or trail mix of your choice (I used Naturebox’s )
  • 1-2 strawberries, sliced (for garnish)
  • 1/2 banana, sliced (for garnish)
  • 1 tbsp toasted coconut chips (for garnish)

Instructions:

  1. Combine pomegranate juice, blueberries, banana + acai smoothie pack into blender and blend.until just combined (or smooth, depending on your preference).
  2. Top with sliced bananas, granola or trail mix, toasted coconut chips, and serve!

  9. I’ve never had an acai bowl but I’ve been lusting over them for months on blogs! I’m going to SD in 2 weeks and hope to find a great place there to get one! Any recommendations?!

    1. I thinkkk the place where I went was called LION Coffee, but Amazona Acai Cafe (841 Turquoise St) and San Diego Blenders (4242 Camino Del Rio N) got great reviews online! :O

  12. This looks so refreshing and delicious! I’ve been making more smoothie bowls lately, since {sometimes} I can get my 14 yo daughter to eat one fro breakfast {and it’s no easy feat getting a teenage girl to eat an early morning breakfast :-)} Love shopping at Sprouts too!
