It was an absolutely gorgeous day a couple weekends ago, so my friends and I decided to go outside to study. (Trust me, this is a big deal/super-highlight in our lives. >_>) Our apartment complex has a little playground/park area that we very rarely go to because it’s usually super late by the time any of us get home, and it’s been grey/rainy/depressing for so very long.
But…good riddance, winter!
The day was beautiful enough to remind me of summer, which made me miss beaches + tropical everything. (I guess that’s what happens when you grow up near the coast and move to a landlocked state.)
Have you ever heard of haupia? :O I used to have it every year at our annual luau for Na Keiki ‘O Hawai’i. <3 Haupia is a coconut milk-based Hawaiian dessert that’s often found at luaus and other gatherings! (I adapted the recipe from here!)
In any case, for our weekly Game of Thrones night, I decided to make a dessert that reminded me of home, at least kindasorta. (I’m not Hawaiian or from Hawai’i, but the UCD Hawai’i Club (Na Keiki ‘O Hawai’i) was part of my life back in California!)
Word of warning: these are a little slippery. Mike picked a couple up with his hand and they slipped and fell on the counter, on top of Isaac’s hospital ID. He picked one up and ate it anyway.
I: Mike, do you know how many thousands of germs are probably sitting on that? You’re gonna die now for sure.
M: Farrah, you should have the other one!
F: Sheesh, what kind of friend are you? I make dessert for you and you want me to die? I see how it is.
M: No, but I want you to die with me. There’s a difference! C’mon, it’ll be fun!
F: How very sweet of you. >:[ (picks it up to throw it away)
M: Put it in your mouth!
F: No!
I: You guys, that sounds so wrong. Farrah, don’t do it! (grabs my elbow and shakes it so most-likely-contaminated-haupia falls in the sink)
(For those of you wondering, Mike is still alive and well.)
Pineapple Lychee Haupia
Pineapple Lychee Haupia
Ingredients
- ½ cup arrowroot powder* + ¾ cup water
- 1 can full fat coconut milk
- 2 tbsp raw honey use maple syrup if vegan
- ½ - 1 teaspoon pure vanilla extract
- 1/4 cup pineapple chopped
- 1/4 cup lychee chopped
Instructions
- Combine the arrowroot powder + water in a bowl and mix until dissolved. Add it to a saucepan with the coconut milk + honey.
- Cook over medium-low heat, stirring constantly until it thickens, then remove from stove and stir in vanilla extract, pineapple + lychee.
- Pour mixture into a pan and refrigerate overnight or until firm.
- Cut into 1-2-inch squares, and garnish with toasted coconut (if using) before serving.

If I remember correctly I had some haupia when I was in Hawaii on my honeymoon! That is where I discovered lychee too and it is so good!!!

Look at you making us all cultured and stuff! Though I will admit–I despise Lychee. It is one of the few foods that I reeeeally don’t care for. But other than that, yum!

Yay! I hope you like it! <3 If you can't find any lychee (I usually scout it out at Asian supermarkets!), you can always sub in with different diced fruit! :]

Mmmm I am sure I am not pronouncing this deliciousness right but I know how good it must taste! I definitely fell hard on the coconut train so I am loving this recipe.

I love when I can get it fresh, but that isn’t entirely possible here, so I make do with canned! :O
I don’t think I’ve ever tried lychee. The recipe includes two of my favorites (coconut and pineapple) so I’ll give it a try. *googling lychee* ;0

Those look good! I had never heard of haupia before. I’m going to Maui next week though and will be hitting up a luau, so I hope I get to try one there! :)

This dessert looks yummy, but I have never heard of arrowroot powder or lychee. So I am going to have to do some research. Also that gazebo sounds/looks awesome!

Thanks! I’ve only ever found lychee in Asian supermarkets in the U.S., so that might be why you haven’t seen it around(?)! Arrowroot powder works pretty much like cornstarch, and helps to thicken mixtures! :]
I have never tried lychees or even heard of them, so I think I should definitely give it a try for the pleasure of expanding my horizons :)

I’ve never been to Hawaii, but hope to go someday! Maybe I can make these and pretend like I am there! They look wonderful, coconut milk is my favorite!
