This recipe is a great way to use up leftovers and reuse/adapt previous recipes to make something new!
If you’ve had a chance to check out my recipe for Avocado Pesto and Pesto Chicken, this is a great way to throw it all together! (…Can you tell that I’m a really big fan of pesto? :P )
Pesto Pita Pizza
Ingredients:
- avocado pesto
- pesto chicken, cut into bite-sized pieces
- 1 pita bread
- sprinkle of Italian blend cheese
- sundried tomatoes (Trader Joe’s!)
Instructions:
- Spread avocado pesto over pita bread.
- Sprinkle on cheese + sundried tomatoes.
- Add chicken and toast for 5-7 minutes at 350 in toaster oven.
