Penne Pasta with “Alfredo” Sauce

During my 2 weeks of vacation back home, my best friend and I met up a couple times to make all the food in the world. Both of us adore food and we lived together for four years, so these days, whenever I come back, we try to fit the whole year’s worth of cooking into 2-3 days. Part of our communication throughout the year is through GoogleDocs (see below), which is where we dump all the recipes of everything we want to make. Don’tjudgeus. We do try to balance this out slightly by making mostly healthy recipes, but still. :O We made this one while Rey was visiting! :]

We’ve since cleaned it up and re-organized it to a giant recipe index divided by types of foods. It is currently 5 pages long and still growing. :O

This particular recipe was adapted from here! We were really hungry, so not too much effort was put into making it pretty, but it’s super tasty! :D

Penne Pasta with “Alfredo” Sauce

Cauliflower "Alfredo" Sauce
 Ingredients:
-1 tbsp butter, softened
-1 head cauliflower
-8 cloves garlic, minced
-freshly ground black pepper, to taste
-pink Himalayan sea salt
-1 cup veggie broth
-juice from 1/2 lemon
-1/2 cup almond milk
-1/4 cup finely grated Parmesan cheese
-EVOO

Instructions:
1) In a large saucepan, boil cauliflower florets on high heat until tender (~10 minutes).
2) While cauliflower is boiling, warm the butter on a saucepan and add the garlic. Saute on low until slightly golden.
3) Transfer cooked cauliflower to a blender with the butter, garlic, veggie broth, salt, pepper and milk. Blend on high for several minutes until very smooth. (If desired, keep adding lemon juice and Parmesan cheese, to taste.)
4) If the sauce is too thick, add more milk. If it’s too dry, add more olive oil.
5) Serve on pasta of choice!

    1. Weirdly enough, I usually never really buy cauliflower, but I think I’m probably going to be experimenting with it much more now. :D!

  2. Wow using cauliflower is something I never would have thought of! Definitely a way to make alfredo healthier! I’ll have to try it! And I love the idea of the Google Docs for your food- what a great way to keep track of everything you want to try!

    1. I love the Google Doc thing! :D It’s been really helpful with categorizing/keeping track of everything, but almost all of them have gotten a little out of hand because I uh, love food a little too much. :x
