Peach Cobbler

I acquired 45 peaches for $10 earlier this month, so I decided to make every peach-related recipe in the world. Weirdly enough, however, I didn’t have all that many peach recipes pinned on Pinterest, so I decided to consult my friends. I got several votes for peach cobbler, so Hira found a healthy recipe for it (here) and we went from there!

H: I don’t have any of these ingredients, but I figured you would.

This is absolutely delicious, and very, very simple to make! I’m definitely going to be trying it out with different fruits. <3 peachcobbler3

Peach Cobbler

Ingredients
  • (Peach Mixture)
  • 3 large peaches, sliced
  • 1 tbsp lemon juice
  • ¼ cup flax seed meal
  • 2 tbsp almond meal
  • 2 tbsp honey
  • (Crust)
  • ⅔ cup almond meal
  • ¼ cup quick oats
  • 1 tbsp cinnamon
  • ¼ cup flax seed meal
  • -1/4 cup brown sugar
  • 1 tbsp honey
  • 1 tbsp Earth Balance
  • 2 tbsp unsweetened applesauce
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix together all ingredients for peach mixture into a bowl. Let sit for ~10 minutes to let flavors mix together.
  3. In a separate bowl, mix together all the crust ingredients to form a doughy texture.
  4. Pour peach mixture into baking dish and cover with the crust.
  5. Bake uncovered for ~35 minutes.
  6. Let sit for ~10 minutes and serve plain, or with whatever toppings you want!

    1. Thanks! :] I happened upon a fruit stand that was selling home-grown peaches and they were selling 8 peaches for $5…or a box of 45 overripe peaches for $10. I couldn’t bring myself to pass the latter offer up, haha. :P
