I’m kinda addicted to this whole baked oatmeal goodness. Next week’s project is probably going to be strawberry banana because strawberries are on sale. <3 The batches I’ve been making tend to be enough to basically have it for breakfast every morning until the next weekend comes around. This makes my whole “make meals ahead of time for the entire week” planning a billion times easier. Aside from being a whole lot more convenient, it also deters me from grabbing junk food because these (and other stuff, e.g. the gigantic meatballs) are ready-made and portioned into containers. :O It helps with the whole healthy eating process. I’ve actually been expelling most of the not-so-healthy food in my place by bringing it to potlucks. heh heh heh…
Peach Blackberry Baked Oatmeal
Ingredients:
-1 can sliced peaches, drained + chopped (mine were in pear juice concentrate :O )
-1 small container of blackberries, chopped
-3 cups rolled oats
-1/2 tsp salt
-2 eggs
-1/3 scant cup brown sugar
-2 tsp baking powder
-1 1/4 cups soy milk
-1 tsp vanilla extract
-small handful of white chocolate chips
-walnuts, crushed
Instructions:
1) Preheat oven to 350.
2) Combine oats, brown sugar, baking powder + salt into a large bowl. In another bowl, whisk together the eggs, milk and vanilla. Add the mixture to the dry ingredients and stir until blended together.
3) Let the mixture sit for ~5 minutes, then add the blackberries and peaches.
4) Pour into a baking dish, spread it evenly and sprinkle chocolate chips and walnuts on top. Bake for 35-40 minutes.
5) Serve! (I usually drizzle soy milk over it.)
