Panang Curry with Chicken

Since we no longer have weekends (due to the fact that our exams have been shoved over to Mondays :'( ), I decided to make a giant pot of curry (I kinda wanted to use up some more rice :O ) so that if we had to suffer through studying all through the weekend, at least we’d have good food to keep us company. I believe this is my first foray into attempting to make curry. I think it turned out well, although it’s pretty darn good at clearing up your sinuses (it’s pretty spicy).

I adapted it from this recipe, mainly because I am somewhat lacking in the world of nearby Asian markets (and coconut milk is expensive). Luckily, I did have the foresight to pick up a couple packets of coconut milk powder (add 2 cups of water per pack and each is only 99 cents! :O ).

My study group adored it (“…And she wonders why we put her in the marriage category.”). Sean kept eating bowl after bowl despite not even being hungry in the first place; Isaac kept coming in to steal pieces of chicken and eventually just moved into the room we were in, and Mike told me it was super good. :O

Panang Curry with Chicken

Ingredients:

  • 5 tbsp Panang curry paste
  • EVOO
  • 1 14 oz can light coconut milk (from Trader Joe’s!)
  • 1 package coconut milk powder (mixed with 2 cups warm water)
  • 2 tbsp light brown sugar
  • 1.5 lbs skinless, boneless chicken, cubed
  • 2 tbsp fish sauce
  • 5 cloves garlic, minced
  • ~1 heaping bowl’s worth of frozen vegetables

Instructions:

  1. Fry the curry paste in a little EVOO until fragrant. Stir in the coconut milk and bring to a boil.
  2. Add in the minced garlic + chicken (I lightly grilled them first on my Foreman grill just to save some time). Cook and stir until chicken is cooked through (~10-15 minutes).
  3. In the meantime, steam the vegetables! Then add to the pot along with the sugar and fish sauce. Simmer together for 5 minutes. Taste + adjust saltiness by adding more fish sauce (if desired).

I had a lot of sauce left over, so the next night, I just brought it to a boil on the stove and threw in a can of sweet corn, a can of chopped pineapples, and about a pound of cubed chicken. It was also rather well-received! :]
