Sheet Pan Meals: We love throwing ingredients together on a sheet pan and roasting for a simple sheet pan dinner. They make busy weeknights a bit more manageable. (And clean-up isn’t bad either!) Show us your healthy take on a sheet pan meal.
I’m counting potatoes as vegetables in this recipe because they are technically botanically classified as a vegetable! :P
I have a confession to make: I haven’t cooked in the longest time. I really need to get back into meal prepping again to save money! It’s still been pretty hot/humid over here (whilst intermittently scattered with thunderstorms and torrential downpours that conveniently happen when I’m covering outdoor games).
In any case, I preface with this to throw in a disclaimer that I haven’t turned on my oven in ages. I also pretty much only have frozen fruit/vegetables in my life right now, save for the 2 apples and 1 banana that I obtained over the weekend from an event I was volunteering at. ._.
I had been planning on roasting the remnants of my Costco bag of frozen veggies, but apparently all I had were frozen peas/carrots/corn/green beans. Not ideal, but you gotta work with what you have! Next time when I try this recipe out, I want to use larger vegetables–e.g. butternut squash, sweet potatoes, Brussels sprouts, etc., but thankfully this turned out rather tasty anyway!
Oven Roasted Mixed Vegetables
Oven Roasted Mixed Vegetables

You'll Need...
- 1 11oz. bag frozen vegetables
- 2 potatoes, chopped
- 1 small red onion, diced
- 3-4 cloves garlic, minced
- 3-4 tbsp coconut oil
- freshly
- ~1-2 tbsp drizzle of balsamic vinegar*
Directions
- Preheat oven to 450 F. (Preheat your pan with fat (e.g. coconut oil) if roasting frozen vegetables.)
- Toss veggies in 1-2 tbsp coconut oil before spreading them out onto the baking pan.
- Arrange vegetables, potatoes, onion and garlic on a single layer onto the prepared pan. Drizzle with coconut oil + balsamic vinegar and desired spices.
- Bake for 15-20 minutes, or until tender.
- Serve!
Additional Notes
Increasing the heat to 450 F will help to evaporate any condensation from your frozen veggies!
*I have a dark chocolate balsamic vinegar that I love and adore. I made popcorn with it before and it was glorious!

Over-roasted is always the way to go in my mind when it comes to veggies. I friggin’ LOVEEEEEEEEE roasted – it just brings out so much sweetness! Oh and crunchiness too! :)

I love oven roasted veggies, I usually eat them a couple of times a week so this post is great for me. I’ve been eating out a lot these last few weeks, which is totally not like me, but I’m sure all of that will change once I do my budget. Nothing wrong with frozen veggies, sometimes it’s my only option.
I’m with you there–I used to never eat out but I’ve definitely been doing that a lottt more lately. I need to start meal prepping again!!

ANYWAY – GENIUS, I HAD NO IDEA YOU COULD ROAST FROZEN VEGGIES!
i am very lazy and hate chopping everything up to make frozen veggies – also, I have not turned my oven on in weeks either, it’s too hot – grilled food all the way ;)

Aww, it’s so great to hear from you! I’m loving my second year of residency, for the most part! :D! And yay for roasting frozen veggies! ;P I wasn’t sure it could be done, but they were the only veggies I had, so I figured I’d experiment! I’m glad it worked out!
