Orange Cranberry Salad

I actually had this meal wayyy back in May, when I moved into the cat shelter (Please Save A Cat), but it was a super-festive one and is perfect for the holidays! (We were celebrating my moving in at the time!) While May/June-ish was a dark and terrible time in my life, it was definitely made better by Linda’s presence in my life. <3

Since we were constantly busy, we’d often go almost an entire week without seeing each other, despite the fact that we were living under the same roof. Usually, we knew the other was alive because of post-it notes on the door and the fact that our cars were/weren’t there. Every now and again, we’d see each other in the barn or work room at night or early morning (poop-scoopin’ or feeding the cats), or if we were really lucky, we’d stand at the kitchen counter to scarf down some dinner together at 10-11 p.m. before getting back to work.

Weekends were nice, because it was the only time we’d really allow ourselves a tiny bit of a break. We tried to eat at least one meal together, and this was one of em’!

Roasted Cornish Hen with Rice & Veggies

I’m spending Christmas at Please Save A Cat this year because I don’t have the money or enough time off to go home-home! Linda is like family to me, so this weekend is gonna be awesome! :]

Orange Cranberry Salad

Ingredients:

  • 8 oz. fresh cranberries
  • 1 fresh navel orange, peeled + hand-chopped
  • 1/2 cup walnuts, chopped
  • 1/3 cup orange juice
  • sugar, to taste

Instructions:

  1. Put cranberries + orange juice in a food processor and process to desired consistency.
  2. Chop the orange and add it to the cranberry mixture along with the walnuts.
  3. Add sugar, to taste.
  4. Chill before serving!

  1. Happy you were able to spend the holiday with someone who is like family since you weren’t able to go home! Love the salad- cranberries and oranges are a great combo!

  6. Just the fact that you said you are spending Christmas at Please Save a Cat pretty much makes you a hero in the eyes of this cat-loving girl right here. I made my own homemade cranberry sauce as well for Thanksgiving this year and I loved it! Can’t even touch that nasty canned cranberry stuff. I like the addition of orange to cranberry. They make good pairings.

I was out in the barn yesterday morning and one of my favorite cats there loves to launch off of shelves to land on my shoulder, but…I didn’t see her, so I walked away and out of the corner of my eye, saw her flying off and crash-landing on the floor. ;_; I feel terrible! :[ She has since redeemed herself today and is feeling a lot better, so at least there’s that!

      I got somewhat traumatized when my brother and I decided to try eating fresh cranberries as is a couple years back, but I’m glad Linda made this and changed my mind! :P
