This was during my mango craze back in the summer. (I ate 12 the day I came back. Yes, 12. Along with regular meals. It’s no wonder that I gained 9 lbs in 9 days. >_>) Jun and I decided to make this after we climbed Mission Peak. We made a slight attempt to make it healthier. :O My brother was somewhat unhappy with this recipe because he didn’t know that we didn’t sweeten the rice at all.
I’m slightly ashamed to admit that this was probably my first time cooking rice without a rice cooker.
Mango with Black Sticky Rice
Ingredients:
-1-2 mangos, sliced
-black rice
-honey, to taste
Instructions:
1) Use a 2:1 (water:rice) ratio. Bring the water to a boil, then reduce the heat and cover it again.
2) Let it simmer for about half an hour, or until the water’s basically gone.
3) Let the rice sit in the pot for about 10-15 minutes.
4) Fluff it up, add honey as desired and serve with the sliced mangos.
