Hasselback Steak

Well, this recipe is actually from back when Trish came to visit me in West Virginia! We spent a little over a day in Asheville and went back to Lewisburg to explore town/basically go on a food tour. We also went to explore the Lost World Caverns and went hiking on the Greenbrier River Trail!

We decided to cook dinner the evening before she left, and she said she’d seen a recipe for Hasselback Steak on Buzzfeed, so off we went for the ingredients!

We started off at the Lewisburg Farmers’ Market and got 2 sirloin steaks for ~$10 from Swift Level Farm. Their cows are grass-fed, free of antibiotics + hormone implants, and they live pretty happy + peaceful lives in the pastures. The lady advised us to cut across the grain since we were using sirloin steaks, and told us to keep them posted on how our cooking adventures went!

Next up, we visited Bella The Corner Gourmet (aka home to all the things I want for my future kitchen). The lady there hooked us up with some Boursin cheese with shallots + chives (since the original recipe called for that anyway!) and cut us a piece of fresh Parmesan, advising us to keep the rind to make soup!

She told us to keep her posted on how our kitchen adventures turned out as well! :] Gotta love small towns! We especially wanted this recipe to turn out well because for once, we had people other than ourselves who were at least somewhat invested in its success.

Thankfully, it turned out well–amazingly well! We like our steaks to be rare (Trish) + medium rare (me), so please excuse the redness if that’s not up your alley. Just keep it in the oven longer if you prefer something less rare!

Hasselback Steak

Ingredients

  • 2 grass-fed sirloin steaks
  • 2 tbsp EVOO
  • 1 shallot finely chopped
  • 2 cups cremini mushrooms diced
  • 4 cloves garlic minced
  • ¼-½ cup red onion diced
  • 2 egg yolks
  • 4 oz. Boursin Cheese Shallot & Chives
  • ¼ cup Parmesan cheese grated
  • Freshly ground black pepper to taste
  • Sea salt to taste

(Steak)

  • 2 tbsp canola oil
  • Freshly ground black pepper to taste
  • Sea salt to taste

Instructions

  • Preheat oven to 400 F.
  • Heat oil in a pan over medium heat and add shallots + garlic. Cook until translucent, then add mushrooms, red onions, salt, and pepper.
  • Combine mushrooms, boursin cheese, and egg yolks in a medium bowl. Stir until evenly incorporated, then set aside.
  • Season both sides of the steak with salt + pepper, then cut ¾ of the way through the steak. (If using sirloin, cut across the grain.)
  • Pack a spoonful of the mushroom mixture into each cut in the steak.
  • Heat canola oil in a pan over high heat and sear the steaks for about 30 seconds each, then bake for 10-15 minutes (depending on how you like your steak).
  • Serve!
