Welcome to Foodie Friday! I haven’t made tacos in a while (not since the breakfast steak tacos ages and ages ago) so what better time to start again than with these ground beef tacos!
Come to think of it, I think I’ve only really ever made tacos one other time(?!). I have no idea why since I’m all for quick and easy recipes and how much quicker/easier could it be than this!?
This was the setup for our taco bar. :]
P.S. If the iceberg lettuce is looking a tad shiny to you, it’s because it’s actually…cabbage. But we meant to get iceberg lettuce. It was 109 degrees outside though so we weren’t feeling all that inspired to go outside again, so waxy lettuce it was! (Still tasted great but I’d recommend not making our mistake and getting actual lettuce instead, hehe.)
Ground Beef Tacos
Ground Beef Tacos
Ingredients
- extra virgin olive oil
- pico de gallo*
- 1 lime rolled + diced
- 1 15.5 oz can of black beans drained + rinsed
- 3 leaves of iceberg lettuce thinly chopped
- 1 lb 93% ground beef
- 2 packets taco seasoning
- 6-8 hard taco shells
Instructions
- Combine pico de gallo + jalapeno into a bowl and let chill in the refrigerator.
- Heat a skillet over medium heat with a drizzle of extra virgin olive oil. Add the ground beef into the skillet with the taco seasoning and brown until no pink remains.
- Fill the taco shells with your desired toppings and serve!
*For the pico de gallo, you can use whatever recipe you want, but if you want to use ours, it’s…2 diced tomatoes, 1/2 diced white onion, 1/3-1/2 cup diced cilantro, and 1 diced jalapeno!

Oh i love me some pico de Gallo! And tacos! Even with cabbage!
hehehe, it was still good, but will definitely have to do this with lettuce next time! :P
I love tacos! This is such a great recipe for easy tacos. Love all the fresh toppings. We have shrimp tacos every couple weeks.
