When I was growing up, my parents didn’t do too much cooking–most of our dinners were made by my grandma (my all-time favorite was her Stir-Fried Tomato and Eggs dish), but the one memory I have of a family effort in cooking was the fruit salad we’d make once every month (or couple of months). I think I started helping with this when I was about 4-5(?).
The recipe was simple enough–a ginormous economy-sized can of fruit cocktail, baked potatoes that were chopped up into bite-sized pieces, hardboiled eggs, and mayonnaise. We haven’t made it in years (I also haven’t lived at home in years :[ ), and I was planning on semi-adapting it since I don’t eat mayonnaise anymore.
Remember the Tahini Freekeh Power Bowls I made earlier this year? I figured I’d make a Tahini Coconut Fruit Salad!
Sounds delicious, right?!
Well, it came out looking really unappetizing so I ate the evidence. Sometimes, life just chooses not to work with you.
So instead, I have another egg dish to share with you since eggs were definitely a favorite when I was little (and also now, because some things just don’t change), but also because I happened to acquire lots of farm-fresh eggs from my last visit to Lewisburg…and I’m also growing green onion in my kitchen right now.
Green Onion Scrambled Eggs
Green Onion Scrambled Eggs
Prep: | Cook: | Yield: 1-2 | Total: |
You'll Need...
- 3 eggs
- 1-2 tbsp soy sauce
- white (or black) pepper, to taste
- 2 green onions, thinly sliced (+ more for garnish)
- ~1 tsp sesame oil
- sprinkle of crushed red pepper (optional)
Directions
- Beat all ingredients (other than the sesame oil) in a small bowl.
- Heat the sesame oil in a non-stick skillet or cast iron pan on medium-high heat.
- Add egg mixture to the skillet.
- Stir constantly until eggs start to form together. Keep stirring until they're almost fully cooked, then transfer to a plate or bowl.
- Garnish with remainder of green onion!

Scrambled eggs are one of our go to easy breakfasts (or lets be honest… dinners :P) and green onions and this is such a simple but flavourful recipe!
I’m glad I’m not the only one who ditches recipes when they look seriously unappealing haha!

We are just starting to make the majority of our kitchen memories together here. We did small stuff when she was little but it’s gotten bigger over time and I love it. And this recipe will be perfect for the two of us.

I love scrambled eggs and this looks such a tasty way to eat them. I sometimes add vegetables or cheese but haven’t tried them with soy sauce for a long time and never with sesame oil as well. So pleased to have another simple idea for how to prepare them!

Oh one of my favorite things is “breakfast for dinner”! Scrambled eggs are aok with me 24-7. That was the most interesting fruit/egg/potato salad descriptions I have heard in a while, unique. I love the sound of your tahini coconut fruit salad sounds awesome! sign me up!

That fruit salad sounds super interesting! Not something I would put together on my own, but now I’m intrigued ;) Funny enough, green onions with scrambled eggs is one of the first things I started making for myself! My mom ALWAYS put green onions in my eggs!
