If you have the luxury of fresh herbs, then by all means, go for it. :O I deemed them too expensive, so I went with my trusty dried ones. I kinda wish I’d added some greenery on the side so it’d look a little prettier, but oh well. Still tastes fine and that’s kinda what matters the most to me anyway. :]
Greek Yogurt Chicken
Ingredients:
-1/2 cup Greek yogurt
-3/4 tbsp lemon juice
-1 tbsp dried oregano
-1 tbsp dried parsley
-1 tbsp garlic powder
-a sprinkle of salt
-freshly ground pepper, to taste
-2 chicken thighs, boneless + skinless
Instructions:
1) Combine yogurt, lemon juice, oregano, parsley, garlic, salt + pepper into a sandwich bag and refrigerate for several hours or overnight.
2) Grill on Foreman grill for 7 minutes or until chicken is browned on top and cooked through. (You can also bake it, but the grill was faster.)
3) If you so choose, you can spoon some more Greek yogurt on top and serve, or…you can eat it on brown rice like I did.

I need to try this! And it doesn’t even look too hard! I am moving soon to Chicago so I will need to learn new things to make! But I will miss my mom’s cooking! ahhh!

Oh gosh, I need to fix this picture, haha. It’s a super easy recipe though, so definitely a plus! Cooking on your own seems daunting at first, but once you kindasorta get the hang of it, it can be really fun! :]
Are you going to be living alone? When I moved across the country for grad school, I’d sometimes make food with my housemates or with friends from school on the weekends, so that helped a lot!
