Gochujang Mayo Beef Bowl

Sorry for the radio silence this week! I’m back on hospital service and the days have been kinda crazy! On the plus side, today is my last day on hospital day service until third year! (I do still have several call days and 2 weeks of nights left though.)

These 80-hour work weeks aren’t going too well in terms of me getting enough sleep whilst trying to do everything else I want to do (e.g. dance practices, climbing practice, lifting, running). Did you know I’m signed up to run a race next weekend?! Guess who hasn’t trained at all? (Yes, this girl. ._.) It’s the first race I’ve signed up for since 2010 and I’ll also be coming off a 24 hour shift the Friday before, so we’ll see how that goes?!

We’re having our annual salsa showcase at the end of this month, and I’m kinda sad that all my club practices are going to be coming to an end soon, but…let’s face it–you know I’m gonna find other things to fill my time up with! (For instance, frolicking outdoors if the weather ever decides to get its shiz together. It’s supposed to snow 3-4 inches tomorrow. >_>)

In other news, this recipe was inspired by my best friend who happened to be experimenting with things he had lying around at his place! This is super super easy to make and all kinds of delicious! Just throw in some veggies and you’ll be good to go for an easy and satisfying meal!

Gochujang Mayo Beef Bowl

Gochujang Mayo Beef Bowl

Yield: 4-6

You'll Need...

  • 1 lb lean ground beef*
  • 3 garlic cloves, minced
  • 2 cups hot cooked white or brown rice
  • 1-2 tbsp gochujang paste
  • 1-2 tbsp mayonnaise
  • sprinkle of furikake seasoning (optional**)

Directions

  1. In a large skillet, cook the ground beef + garlic until no longer pink.
  2. Mix together gochujang paste + mayonnaise and add to rice + beef.
  3. Sprinkle with furikake seasoning and serve hot with steamed vegetables!

Additional Notes

*You can use any kind of protein you want with this! I just happened to have beef on hand so I went with that!
**Although this is optional, it really does elevate this super simple meal to the next level!
