I’m on my OB rotation right now, and the hospital I’m at is ~45-60 minutes away so my schedule is going to be pretty sporadic over the next couple weeks. I’ve also been pet-sitting this adorable ball of fluff while my friend is on vacation. Isn’t he the cutest!?
I’ve always been the resident pet-sitter between the four of us because, well, crazy cat lady/animal lover status is mine and mine alone. (Isaac has a hedgehog, Sean has a sugar glider, Mike has a chinchilla, and I have my cat.)
I was initially concerned that Muffin would eat him, but she has zero interest in Lord Snow, despite his two successful attempts at escaping his cage and roaming free across my apartment. (The first time, I saw a giant snowball of fluff scurrying across the room out of the corner of my eye.)
I managed to Macgyver some home improvements for Lord Snow and was thankfully successful! He’s since been jumping and headbutting the top of the cage in his failed attempts to escape his ginormous prison. (Hauling that thing up my narrow staircase by myself was not fun.)
Lord Snow actually has absolutely nothing to do with this recipe, but I just wanted to share because he’s so cute.
…Onwards to the recipe!
Are you a fan of ginger? :D I’ve liked it for as long as I can remember–in desserts (e.g. Steamed Ginger Egg Custard, Coconut Ginger Ice Cream with Mango & Passionfruit), Chinese dishes of all sorts (Sweet Rice Vinegar Oxtail with Eggs with Ginger, pot stickers)…but I especially enjoy it in hot drinks (Ginger Milk Tea or Ginger Almond Milk Tea)!
This actually tastes kinda like chai! It’s super customizable to your taste, so if you want it more ginger-y/sweet, add more ginger syrup! If you go a little too overboard on that, you can always fix it by adding more milk or steeping another tea bag. :]
5-Ingredient Ginger Tea Latte

As fall weather approaches and the temperatures get chillier, there's not much better than curling up with a hot drink and a good book or movie! Try out this customizable 4-ingredient Ginger Tea Latte!
You'll Need...
- (Ginger Syrup)
- 1 1/2 cups water
- 1 cup coconut sugar
- 1 large piece ginger*, peeled + sliced
- (Latte)
- ~1 1/2 tbsp ginger syrup
- 1 1/4 cups plain almond or soy milk
- ginger or black tea bag
- sprinkle of powdered ginger (optional
- sprinkle of cinnamon (optional)
Directions
- (Ginger Syrup) Bring water, sugar + ginger to a boil and stir to dissolve the sugar, then reduce heat to a simmer and let cook for ~30-40 minutes. Remove the ginger pieces and transfer the liquid to a jar.
- (Latte) Heat milk in a pan or in a mug in the microwave. Steep tea bag in milk for 3-5 minutes, then pour in ginger syrup, adding more as needed.
- Sprinkle with powdered ginger and/or cinnamon, if desired.

*You can dehydrate the reserved ginger pieces to make your own candied ginger!

Yes ! I have all ingredients on hand for the ginger tea latte :), maybe I’ll try it out, it looks good. What a funny animal this lord snow. He looks very nice though ( I hope he’s nice), and bigger than i thought a chinchilla would be !

He’s probably a lot smaller under all the fluff, but his fur makes him look like a ginormous puff ball! He’s pretty nice–just rather skittish!
This looks so good! I will have to make this super soon. I love that you use coconut sugar too, that’s my fave sweetener!

Yay! I hope you like it! I really like the coconut sugar as well–it’s actually one of the only two sweeteners I have in my apartment right now! :P (The other is honey! :D )
Lord Snow is such a cute little fluffball! Ohmygoodness, I want to hold him. I love seeing new types of tea – tea is my jam. Never have been a coffee drinker, but sign me up for tea!

I’ve never been much of a coffee drinker either (I like coffee-flavored things but I save actual-coffee for life-or-sleep situations! :P ). I’m all about tea too!

Sooo, I don’t think I’ve ever seen a chinchilla in “real life” but I reaaaaaaaaaally really want one as they look so cute and fluffy and cuddly.
