Much to my dismay, I was struck down by the plague a really bad cold last week and ended up not getting anything blogging-related done whatsoever. I’m still on night shift at the moment but managed to get together with my cooking buddy to put together this recipe for Garlic Flatbread with Grilled Chicken, Arugula & Tomato yesterday afternoon! (Talk about cuttin’ it close?!) We’re on a mission to make all the things, watch all the MCU + Stephen Chow movies, and go hiking/camping all over the NJ/NY/PA area–we’ll see how far we get! (I think it’s good to dream big. :P )
Garlic Flatbread with Grilled Chicken, Arugula & Tomato
Garlic Flatbread with Grilled Chicken, Arugula & Tomato
Prep: | Cook: | Yield: 8 | Total: |
You'll Need...
- 8 pieces of flatbread (small*)
- 1 tbsp Chef Shamy's Garlic Butter with Parmesan Cheese & Basil
- 1/4 cup shredded cheese
- 1/4 cup arugula
- 8 slices of tomato
- 2 chicken breasts, cut into bite-sized pieces
- 3 tsp Mrs. Dash Salt-Free Original Seasoning Blend, or to taste
- 2-3 tbsp Chef Shamy's French Onion Butter with Asiago Cheese
Directions
- Spread garlic butter over the bread and sprinkle cheese evenly over each.
- Top with a slice of tomato and arugula.
- If indoors, toast the bread in a toaster oven for ~3 minutes. If outdoors, wrap in foil and put on the grill for a few minutes.
- Season the chicken.
- Add French onion butter to cast iron grill pan and add in the chicken, cooking until juices run clear and the middles are longer pink.
- Top each flatbread with chicken and serve hot!
Additional Notes
*You can pretty much use any type of sturdy-ish bread.
(If you want a vegetarian version, you can always just take out the chicken!)

Thanks! I’m definitely feeling wayyyy way better than I did last week! There’s a chance that was part of it, but I worked the Friday night before officially starting night shift and I think the call room’s ice-cold temperatures and my lack of any blankets (they were out :'( ) definitely played a role. :[!
