I figured I’d start off with a new salad recipe that’s a combination of savory with hints of sweet–a fresh summer fruit pesto salad! :] (Made possible by a delicious pesto genovese with truffles sent to me by The French Farm! :] )
Fresh Summer Fruit Pesto Salad
Fresh Summer Fruit Pesto Salad
You'll Need...
- 1-2 white nectarines, cut into bite-sized pieces
- 16 oz strawberries, sliced
- 6 oz blackberries
- 1/2 cup red grapes
- 1/4 cup fresh mozzarella, cut into bite-sized pieces
- 1 1/2 tbsp La Favorita Pesto Genovese with Truffles
- 1 1/2 white balsamic vinegar
- 1 tsp EVOO
- sprinkle of hemp hearts (to taste)
Directions
- Combine all fruits + mozzarella into a large bowl.
- Drizzle in pesto, white balsamic vinegar and extra virgin olive oil.
- Toss to combine.
- Sprinkle with hemp hearts and serve!
Additional Notes
This is super versatile and very much a "to taste"-type recipe. I like minimal amounts of dressing, so if that's not your preference, you can add more!

Pesto and fruit?! I’m intrigued. I have never had those two together but I bet with the mozzarella in there too it’s a nice sweet and savory combo. Going to try it!

Oh, that salad looks so fresh and delish! I never thought of combining pesto with berries. Sounds yummy! I absolutely love love love ribs and corn-on-the cob on the grill. That, to me, tastes like summer! My whole family has been OBSESSED with caprese salad in the past few months, and with tons of tomatoes in my garden and two big bushes of basil growing on my deck, we will be able to enjoy it all summer long!
