Freekeh Harvest Bowl

Happy Black Friday! :o I am chillin’ with our zoo over at Please Save A Cat today. After the 30th, I won’t get to see Linda or any of them until April! :[! I had to say goodbye to all my friends at church in Kentucky and PCMAA earlier this week too, so not gonna lie, I’m feeling a tiny bit down because it feels like I’m always saying goodbye, but I’m so glad to have met them…and there’s always a silver lining somewhere!

(Guess who gets to finally see her family and hopefully most of her closest friends again next week/month!?!?!?)

Onward to the recipe! I love a whole lot of different kitchen contraptions, but one of my favorites would likely have to be what I lovingly refer to as my first-world rice cooker (affiliate link!).

I use that sucker for everything, from its intended function of cooking rice (brown rice, mixed rice, sushi rice, etc.)…to cooking quinoa, steaming vegetables, making [birthday muffin] cakes (yes, really), and most recently, cooking freekeh!

I actually made this back when I was on one of my audition rotations (the one with the creepy basement!), when I was trying to use up as many of my leftover ingredients as I could. The avocado was kindly donated by my then-housemate. :D

Freekeh Harvest Bowl

Ingredients:

  • 1 package Rosemary Sage freekeh
  • 1 bag (12 oz.) frozen stir fry vegetables
  • 1 can pink salmon
  • 1 12 oz. container silken tofu
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1 avocado, cubed
  • 1-2 tsp roasted garlic seasoning

Instructions:

  1. Add freekeh + water (1:2.5 ratio) into rice cooker bowl with frozen vegetables and salmon. (You can also put the veggies into the steamer basket, but I was too lazy to do even that.)
  2. Press start!
  3. After freekeh/veggies/salmon are done cooking, add in tofu, walnuts, dried cranberries, and avocado. Mix until combined.
  4. Sprinkle in roasted garlic seasoning and serve warm!

    1. I adore harvest bowls as well! :D Quinoa and rice would both work perfectly with this! I had it with brown rice before I found my freekeh! :P

  7. Yes please! I so need a rice cooker! I guess I need to add that to my Christmas wish list!
    Even though I am a pretty good cook, I have always had the WORST time with rice! For years I used to ALWAYS mess it up…I don’t get it. Haha

    Anyways, I hope your days of saying goodbye are over sooner than later, and I hope you have a really great time with your family when you see them!

  10. I love how much avocado you have in that bowl! Avocadoes make anything taste better than it is which is why I pair it a lot in my salads!

  15. Freekeh is one of my favourite grains! It’s so hearty. I don’t have a rice cooker but I do love my blender and food processor- they make life so much easier for me!

    This sounds good! I tried a bag of freekeh once, and haven’t tried it since, this is a good way to have it!
