Loaded Turkey Santa Fe Baked Sweet Potatoes

I’m a huge fan of baked potatoes in general, and even more so of sweet potatoes! :O I love all the different options for stuffing em’, so when my friend suggested that we make these while I was home last September (yes, I lagged a full year in posting this–I blame medical school), I was all for it!

This recipe was also adapted from SkinnyTaste, which I sneak-previewed at the end of last month’s Foodie Friday post with the Avocado Mango Salsa.

Loaded Turkey Santa Fe Baked Sweet Potatoes

Ingredients:

  • 3 sweet potatoes
  • 1/2 lb. 99% lean ground turkey
  • 1/2 cup canned black beans
  • 1/2 cup fresh or frozen corn kernels
  • 1 large tomato, diced
  • 1/2 onion, chopped
  • 1 tsp cumin
  • 2 tbsp cilantro, chopped
  • 1 jalapeno, diced
  • 1/4 cup scallions, chopped
  • pinch of sea salt
  • freshly ground black pepper, to taste
  • drizzle of EVOO
  • 0% Fage Greek Yogurt (optional)
  • freshly grated cheese of your choice (optional)

Instructions:

  1. Preheat oven to 450.
  2. Stab potatoes with fork on multiple sides and microwave for ~6 minutes. Cut in half horizontally and scoop out the potatoes.
  3. In a large skillet, brown turkey + add beans, onions, cilantro, tomatoes, jalapeno, and cumin. Mix well and simmer on low for ~20 minutes.
  4. Remove lid, then add corn and simmer for another 5-10 minutes, or until liquid reduces.
  5. Lightly drizzle sweet potatoes with EVOO + place on baking sheet. Season with salt + pepper and bake for 10 minutes.
  6. Add meat filling and top with Greek yogurt + scallions. (You can also melt some cheese on top if you’d like!)

Fun Fact: I used this filling to make miniature Shepherd’s Pies!

  1. Oh I love sweet potatoes, though I haven’t had them in so long! That looks more like a whiter or a yellow variety–I always get the orange ones. Purple yams are really common here but I’ve never yet cooked with them–apparently purple potatoes intimidate me a little.

    1. I usually have the orange ones too, but we were at an Asian market, so we went for these. I really like purple yams! I made purple yam milk a couple years back and it was super tasty! (They’re never found around here, unfortunately–I really miss em’!)
