Is it sad that every time my blog stats indicate that someone’s totally been creeping on my blog (aka a wholeee ton of views to a bunch of different posts, but not-crazy-high amount of unique visitors), I wonder if a residency program has perhaps discovered my internet existence? (I guess it’s really not that hard, because apparently, searching my full name will get you here.)
Well, whether or not that’s the case…if you happen across this post, hello there! Welcome to my blog, I hope life is treating you well, that you like this recipe (if you choose to continue reading), and that you have a great weekend!
A couple weekends ago, I headed back to Please Save A Cat to spend the weekend, partially so I could visit Linda, and also so I could pick up a blanket and cold-weather clothes so I wouldn’t freeze to death. (I think the current tally for falling-asleep-shivering/nights-I’ve-slept-with-no-blankets = 5.)
Also, my rotation in Washington has been cancelled. Again. (At this point, I will not in fact be heading over there for an audition. :[ ) However, patience apparently does pay off, because the rotation I requested for the end of the year (which would effectively cover the rest of my graduation requirements) has finallyyyyyyyy been approved!
Hooray hooray! :D! This means I get 4 weeks of elective time, so I’m hoping to do a Nutrition rotation in November, and possibly one in Occupational Health/Acupuncture in April. We shall see! <3
And now…onward to this delicious goodness!
Huevos Rancheros (with a side of Home Fries!)
Huevos Rancheros
Ingredients
- 1 tbsp extra virgin olive oil
- 2 duck eggs + 2 chicken eggs
- 2-4 corn tortillas
- 1 can refried beans with green chiles
- 1 can enchilada sauce
- 1 jalapeno diced
- 1/2 avocado chopped
- 2 roma tomatoes chopped
- 2-3 tbsp fresh cilantro
- Mexican cheese shredded (optional/to taste)
Home Fries
- 2-3 potatoes chopped
- 1 green bell pepper diced
- Lawry salt to taste
- freshly ground black pepper to taste
- garlic powder to taste
Instructions
- Warm each tortilla in a skillet, then heat the refried beans and spread them onto the tortillas.
- Add the EVOO to the skillet, and crack eggs into the skillet. Cook for ~1-2 minutes, or until the bottoms of each are set and the edges are golden.
- Cook for another minute, then place each egg onto the tortilla. Add enchilada sauce and top with jalapeno, avocado, tomatoes, cilantro, and cheese (not pictured).
(Home Fries)
- Dice potatoes and rinse. Add them to the skillet and stir in the diced green peppers, then season with salt, pepper and garlic powder.
- Cover with a lid and cook for 10 minutes, then uncover and cook for another 10 minutes and stir occasionally while letting it cook for ~10 minutes, or until crisp and browned.

My friend and I have 4 pet ducks and the two girls recently (finally!) started laying eggs! They're being a lot more prolific than the 20 chickens she has who appear to be on strike!
