Fish Ball Noodle Soup

Welcome to Foodie Friday! Have you ever had Fish Ball Noodle Soup (魚蛋湯粉)? You’re in luck! It’s super simple to make and this adaptation only takes 5-6 ingredients!

This is part of quarantine cooking wherein we (aka my family) are on a mission to use up all/most of the ingredients we have at home prior to venturing out into the world to buy more groceries! I’m all for easy, quick + healthy dishes, and this fit all of the above!

It’s a fairly versatile recipe–you could use any vegetable you want, but we have a ton of spinach at home and it cooks down into nothing, so why not throw in a bunch? :P You could technically use any kind of meatball too to substitute, or tofu if you’re vegetarian!

If you’ve never had fish balls, they consist of fish paste shaped into meatballs and are usually boiled in a broth or deep-fried! The fried version is commonly sold on streets in Hong Kong with curry sauce or other toppings and they’re absolutely delicious! (I need to learn how to make those–will share if I’m successful!
