My friends don’t call me a black hole for nothin’! If my favorite restaurant round-up and Yelp Elite status didn’t indicate that I’m a total foodie…well, here’s me telling you that I live to eat, and not the other way around. :O
This week’s theme is meant to give everyone a break of sorts, and to bring send some love to our favorite creations from the year, because WHY NOT.
…This roundup also brings to light just how many different plates I happen to have in my kitchen. (Or, well, my former kitchen, since I’m currently kinda homeless. hahhh.)
Thai Vegetable Curry Bowl (This is vegan, vegetarian + gluten-free, but I’ve also thrown in shredded chicken with it, and it’s delicious! Super flavorful and very filling! I may or may not have tried to win over a resident with this when I was trying to convince him to be on Medicine when I was on.)
Apple Nachos (This is vegan + gluten-free! Per reader suggestions, you can drizzle melted peanut butter, caramel, or add applesauce for extra deliciousness! If you’re not vegan, a drizzle of honey would work as well, and if you want an awesome not-so-healthy treat…Twix pieces and/or cookie butter are also magical additions. You’re welcome.)
Pomegranate Blueberry Acai Bowl (I fell in love with acai bowls when I first tried one in San Diego.)
Salmon Burgers (I am of the belief that guacamole makes everything better in life, and I happen to also love salmon, so this was a win-win situation! Packed with protein and doesn’t take much prep time at all! I made a bunch so I’d always have a great post-workout snack/meal to munch on.)
Pineapple Lychee Haupia (I’m missing summer, and this dessert always reminds me of it. I really hope I get to go to Hawai’i as a graduation-present-to-self next year! *-*)
I have a billion other recipes, because for a while (back when this was pretty much my online-but-private-diary, this was a place for me to dump all the recipes I tried out so I’d have something to look back on for the foods I’ve attempted to make over the years. :]
I mapped it out in a Recipe Index earlier in the year so it’d be slightly more organized, and the dropdown menu has them all categorized to the best of my ability! This probably speaks volumes about my OCD/type A tendencies. :O (Feel free to check out my Recipe ReDuxes too!)

Awesome round-up! They all look delish but top of my list would have to be those salmon burgers! They look so flavorful and everything’s better with a dollop of guac :)

I share your belief that guacamole makes everything better. Healthy recipes haven’t been my strong suit lately, been using all the festivities as an excuse to make all my favorite cream cheese-laden dips. :)

hahaha, the holidays can definitely be a tough time to make healthy dishes! I like to just go for old favorites with some modifications to make them healthier than they could be! :]
