It’s Montana’s birthday today! (Go wish her a happy birthday over at Pretty Lil Mudder! :] )
Back? Alright, let’s carry on!
This simple, 4-ingredient recipe yields about 20 small bars, and they taste like coconut macaroons! (Except they’re actually good for you!) I adapted this recipe from a friend. It’s pretty versatile! You probably add whatever you’d like to it (e.g. nuts, dried fruits, chocolate chips, etc.).
The recipe was actually borne out of desperation during boards-studying because my friend was somewhat broke and hell-bent on studying, so she hadn’t visited a grocery store in weeks. (We led pretty sad lives, but had I’d known that she’d been in that situation, I would’ve shared my food with her. :[ ). In any case she did happen to have shredded coconut flakes, flour, some milk, and protein powder left in her kitchen, so she got creative, and here we are today. :O
This was the first time I tried making this, so there was a lot of experimentation involved with the amounts of ingredients used. I probably should have added more milk than I did (I used probably somewhere in around 1/6 of a cup), because mine didn’t stick together as much and they were a little crumbly. That being said, however, I can use the more crumbly pieces to put in yogurt or to throw in my oatmeal. Win-win! That’s my excuse for why they’re not as pretty as they could be, but trust me–they’re still delicious. :D
Coconut Protein Bites
Ingredients:
- 6 oz. (1 bag) unsweetened, shredded coconut
- 1/3 cup almond meal
- ~1/4 cup chocolate coconut milk (or your choice of milk)
- 1 scoop MusclePharm Cookies ‘N’ Creme whey protein powder
Instructions:
- Preheat oven to 375 degrees.
- Combine coconut, almond meal and protein powder into a bowl. Mix until combined.
- Add just enough milk to make the “dough” sticky. Mix until well combined.
- Flatten onto a baking pan/dish and bake for ~15-20 minutes, or until browned at the edges.

Those coconut protein bites look absolutely delicious and I LOVE how simple they are to make!!! I am adding these to my list of recipes to try soon :)

Sweet! I hope you like them! I haven’t completely solved the sticking-together situation, but if you let them set for a bit or chill them, it ups the chance of them being able to break into bite-sized pieces!

Baking with coconut has been changing my life – FOR THE BETTER!!! SO GOOD! I thought I hated coconut but the flour doesn’t taste like the gross flakes at all! It’s weird, but awesome!

hehe, I’m glad! :D I didn’t discover coconut flour until just a couple years ago, but it’s awesome! :] I do like the flakes too, but I’m somewhat of a coconut fiend, haha. :P

I hope you had a good one! :D I remember you said you liked coconut, so I figured I’d sneak in another coconut recipe for your birthday week! :] It’s gonna take me a while to be able to make all the awesome recipes everyone keeps coming up with, but I definitely can’t complain! :D Super excited to start on em’!
Yum! Love when yummy treats are made from a few simple ingredients! I have some leftover coconut from my coconut chicken so I will make these :)
