Chocolate Nut Butter Meltaways

Hi everyone! This is my 3rd year participating in the Food Blogger Cookie Swap! :]!

The premise is simple: you send cookies to 3 other food bloggers and get 3 dozen cookies from 3 different food bloggers in return…and best of all, we get to support Cookies For Kids’ Cancer, a national non-profit organization that funds new therapies used to fight against pediatric cancer!

Last year, I made Apple PB Oatmeal Cookie “Dough” Bites, and the year before, I made Coconut Cookie Dough Bites!) In between, I ran a treat swap fundraiser at my school to send homemade treats to troops abroad, the local domestic violence shelter + children’s homes, and to raise money for the two animal rescues I volunteered at. :]!

Since I’ve been healthifying no-bake bites/balls for the past 2 years, I figured I’d continue with that theme/tradition this time around too, especially since my access to a kitchen wasn’t all that constant. I managed to make and send these out the weekend before I did my crazy week of travels (West Virginia to North Carolina to New Jersey to California to Nevada to Arizona in a single week)!

I loosely based this off of a recipe that a friend sent me. Lots of substitutions were made because I wanted to make it healthier, and also had lots of ingredients I wanted to use up from previous kitchen experiments and from Choctoberfest, including some chocolate that Allison @ The PinterTest Kitchen sent over!

Truth be told, the vegan butter I used probably wasn’t even necessary–I just happened to run out of nut butter, and the last bits weren’t really sticking together, so that did the trick.

Chocolate Nut Butter Meltaways

Ingredients:

  • 3/4 cup natural peanut butter
  • 1/2 cup natural almond butter
  • 1/2 cup powdered sugar
  • 2 oz. Just Hemp toasted + salted hemp seeds
  • 2 tbsp Earth Balance (vegan butter)
  • 5.3 oz. Divine Chocolate 70% bittersweet chocolate

Instructions:

  1. Mix nut butters, powdered sugar, hemp seeds, and vegan butter (or more nut butter) together until smooth.
  2. Form into ~1-in. balls and chill.
  3. Melt chocolate in 20-second increments in the microwave, and roll each of the balls into the chocolate.
  4. Let them set on wax paper and chill again before packaging them up!

    Yum! These look amazing! I don’t know if I could pick a favorite cookie! I love gingerbread this time of year. Paradise Cafe used to have a pumpkin oatmeal white chocolate chip cookie that was to die for! That might be my favorite of all time!

  7. This is such a fantastic healthy cookie recipe Farrah! I make these peanut butter balls with rice krispies cereal and coat them with chocolate – but, I am loving your use of hemp seeds in these instead of my rice krispies cereal!
