Lately, I’ve been pondering the awesome-ness that would come from owning a bread machine and an ice cream maker. This would definitely have to wait until I were living somewhere with a kitchen that was significantly bigger, but think of all the possibilities! :O!
But enough about that (for now). Here’s something that my summer group liked to make back in 2006! :O We kinda don’t hang out that often anymore, partly due to the fact that we are strewn all over the country (well, all over California, with the exception of me), and also due in part to complications that tend to happen when people start dating within the group. (sigh.) But the memories of road trips, late-night hot-tubbing and pizookies still remain!
You’ll need a pie-sized circular dish for this recipe! :]
Chocolate Chip Pizookie
Ingredients:
- vanilla ice cream
- cookie dough (from scratch [see below for somewhat healthier recipe] or use ready-made [which we did because this was many years ago, before I discovered the joys of making food)
Instructions:
1) Bake the cookie in the pan and scoop ice cream on top. There are endless variations that you could do with this (both with the cookie and the ice cream :D!).
Chocolate Chip Cookies

Ingredients:
-3/4 cup rolled oats
-1 cup whole wheat flour
-1/2 tsp baking soda
-1/2 tsp salt
-1/4 cup butter, softened
-1/4 cup canola oil
-1/3 cup granulated sugar
-1/3 cup brown sugar
-1 large egg
-1 tsp vanilla extract
-1 cup chocolate chips
Instructions:
1) Preheat oven to 350 F. Coat dish with cooking spray.
2) Grind oats in blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla. Beat until smooth and creamy. While mixer is still running, add dry ingredients, beating on low until just combined. Stir in chocolate chips.
3) Drop dough into circular pan and “spread” evenly. Bake for about 15 minutes.
