My friend’s boyfriend was in town for Labor Day weekend, so we decided to have a late lunch, despite the fact that I’d had 3 plates of food about 1.5 hours before heading over. My church feeds me well, and I have a problem with eating everything on sight.
It’d been pretty hot (or maybe “stuffy” would be a better description; my apartment is like a steam room! I’m hoping this bodes well for winter; it’s all about the silver linings), so hello smoothies!

Jamie makes the most awesome punches for our get-togethers. :D They always end up looking so pretty and fancy. :D This is basically the only time I ever drink anything carbonated.
Tropical Ginger Punch

1 bottle ginger ale
1-2 cans pineapples, crushed or sliced, with pineapple juice
I meant to add nutritional yeast flakes too, but forgot about it. It was late. :/ You can use this as a spread, a dip, a pasta sauce (probably best not to reheat it though)…the possibilities are endless! :D I didn’t have pine nuts (they’re morbidly expensive), so I subbed with cashews instead.
This is basically my go-to breakfast since it’s super quick and can be prepared/ready to be consumed by the time I’m done with brushing my teeth, putting on clothes, and all that good stuff.
