Perhaps not the most aesthetically pleasing as far as salads go, but this is super tasty, simple to make, and very filling! It’s also part of installment #2 of the next batch of recipes that Hira and I tackled. :O (Recipe adapted from here!)
Cajun Potato Salad
Ingredients:
-2 large potatoes
-2 large hardboiled eggs
-3 green onions, sliced
-3/4 cup Greek yogurt
-1 stalk celery, diced
-dried parsley
-1 tbsp coarse brown deli mustard
-1 tbsp red wine vinegar
-1 tbsp blackened seasoning*
-dash of salt
*(Blackened Seasoning – makes 1 tbsp)
-1/2 tbsp smoked paprika
-1/2 tsp cumin
-1/2 tsp thyme
-1/2 tsp oregano
-1/8 tsp cayenne pepper
-1/8 tsp garlic powder
-freshly ground black pepper, to taste
Instructions:
1) Wash potatoes and cut into 1-1.5″ cubes. Place in a pot, cover with water and bring to a boil. Boil for 7-10 minutes or until very tender. Drain in a colander.
2) While potatoes are boiling, slice green onions + dice the celery. Peel and chop the hardboiled eggs. Place onions, celery, parsley + eggs in a large bowl.
3) To make the dressing, stir together the Greek yogurt, mustard, vinegar, blackened seasoning and salt.
4) Once the potatoes are well-drained and slightly cooled, add them to the boil with everything else. Pour dressing over the top and stir until well combined. Slightly mash potatoes as you stir until it reaches your desired consistency. Serve immediately or refrigerate until ready to eat!

It was super good! I don’t think I’ve ever had Cajun/creole seasoning, hehe. I’m glad it turned out well!
totally intrigued by this. i don’t eat a lot of cajun stuff so it’d be a fun change of pace in my house!

Same here! I don’t think I’ve ever had it, but making the seasoning from scratch was kinda fun. I forgot to upload that picture (oops :P will add it in later, I guess!).
We are heading into BBQ season and I think this recipe would be a tasty change from regular potato salad
